White pudding is not a dessert, but an oatmeal sausage containing meat. Here are some recipes for preparing this dish at home.

When it comes to the traditional Irish breakfast, white pudding is almost indispensable. In some regions, this dish is also referred to as Hog's pudding or mealy pudding. Preparation of white pudding is similar to that of black or blood pudding or blood sausage; but the latter uses animal blood and so it is black. White pudding is made of bread, oatmeal, pork meat, suet (animal fat), etc. Even onions and spices, like cinnamon, are used for preparing white pudding. Earlier, sheep brain was also used as a white pudding ingredient. There are some vegan versions, which do not contain animal fat. The ingredients are prepared and stuffed into casings. This sausage can be cooked in whole or as slices. It can be consumed in fried form too.
Recipe I - Irish Style White Pudding
  • Pork butt (medium ground) - 2½ pounds
  • Fine ground pork butt - 2½ pounds
  • Plain bread crumbs - 5 cups
  • Slightly roasted, medium oatmeal - 2 pounds
  • Eggs - 4
  • Garlic (pressed) - 8 cloves
  • Thyme - 3 tbsp.
  • Black pepper (ground) - 3 tbsp.
  • Basil - 3 tbsp.
  • Marjoram - 3 tbsp.
  • Salt - 1 tbsp.
  • Ice water - 2 cups
How to Prepare

Take a large bowl and combine the ingredients. Some people soak the oatmeal beforehand. Even the meat can be minced with one or two small onions. Once done, fill the ingredients in sausage casings and seal them. It will be better to soak the casings overnight in salt water. Boil or steam the sausage at 165 to 175° F (75 to 80° C). The time limit for boiling is based on the thickness of the sausage. One full minute is needed for every millimeter of thickness. The internal temperature of the cooked white pudding would be 162° F (72° C). Once boiled, let the sausage remain in hot water, for a few minutes. After that, put them in cold water. You may consume this sausage, as soon as it is boiled, or you may slice and fry it after cooling.
Recipe II - Scottish Style White Pudding
  • Shredded beef suet -1 pound
  • Toasted oatmeal (medium) - 2 pounds
  • Onions (medium) - 4
  • Jamaica pepper - as per taste
  • Salt - as per taste
  • Sausage casings
How to Prepare

Toast the oatmeal in the oven and finely chop the onions. Take a large bowl and mix the onions and oatmeal with shredded beef suet, Jamaica pepper and salt. Fill this sausage stuffing in casings and seal them. Boil the sausage before consumption. You may also fry them or store for later use.
