Tastessence answers the questions that show up mid-recipe, when your hands are covered in flour and dinner can't wait. Out of buttermilk? There's a fix in your fridge right now. Mashed potatoes gone gluey? We know why, and how to keep it from happening twice.
We keep it brisk on purpose. Food writing loves a long wind-up — the memoir, the scenery, the eight paragraphs before the oven temperature you came for. Around here the answer comes first and the wind-up doesn't come at all: what works, why it works, where it stops working, and back to the stove you go.
Behind the brisk is a process. Claims get checked before anything publishes, food-safety questions get the authorities' answer rather than the internet's, and when we're wrong we fix the article and say so — the details live on our editorial standards page.

The fix lands in the first two sentences. The why — and the where-it-breaks — comes right behind it.
Checked Twice
A substitution ratio or a storage time only ships after it's been verified. A precise-sounding number we can't stand behind doesn't make the cut.
No Recipe Police
Boxed stock, store-bought puff pastry, a ten dollar bottle of wine: all perfectly respectable. We care that dinner works, not that it's fancy.
Folklore-Free Food Safety
Storage times and temperatures come from the published guidance of food-safety authorities, never from somebody's aunt on a forum.
