Recipes from Scratch for a Ridiculously Tasty Sponge Cake

If you want to come up with a perfect sponge cake, you have to combine the right ingredients in the proper manner. Here are some recipes for making sponge cake from scratch.

The sponge cake is said to be European in origin, and is the oldest non-yeast cake. Traditional sponge cake recipes do not contain any form of fat, except those in eggs or leavening agents. Nowadays, this cake is available in different versions, but its texture remains the same - fluffy and airy, just like a sponge. Though making a sponge cake is not that difficult, you must follow the proper method to come up with a perfect cake. Given below are some recipes for making sponge cake from scratch.
Easy Sponge Cake
  • Cake flour - 2 cups
  • Eggs - 4 (large)
  • Sugar - 1 cup
  • Unsalted butter (softened) - 1 cup
  • Lemon zest - from half lemon
  • Vanilla extract - ½ tsp.
  • Warm water (or milk) - 2 tbsp.
  • Lemon juice - 2 tsp.
  • Baking powder - 2 tsp.
  • Salt - one pinch
How to Prepare
Blend lemon zest and sugar in a food processor, till they become a fine powder. Add softened butter to a bowl, along with the lemon zest-sugar powder. Beat these ingredients for around five to seven minutes or till they get fluffy. Add the eggs to this mixture, one by one. After adding each egg, beat the mixture well, so that they get mixed well with the butter. Once done, fold in the lemon juice, water and vanilla extract. Keep this mixture aside. Take another bowl and combine the flour, baking powder and salt. You may also sift this mixture two to three times, so that they mix well.
Add almost half of this flour mixture to the egg-butter-sugar batter. Blend them (on low) for a few minutes. Add the remaining flour mixture and blend for another ten minutes, on medium speed. Blend well till the batter develops a marbled texture with a glossy finish. This mixing step is very important as it is the perfect blending that creates air bubbles, which are responsible for the fluffy texture of the cake. Pour the batter into a greased mold, and bake for around 30 minutes in the oven that is preheated to 350° F. Once done, the sponge cake will be golden in color, and the edges start separating from the mold. You may serve this cake with or without icing.
Chocolate Sponge Cake
  • Cake flour - ¾ cup
  • Cocoa powder - ½ cup
  • Sugar - 2 cups + 2 tbsp.
  • Eggs - 8
  • Butter - 3 tbsp.
  • Baking powder - 1 tsp.
  • Milk - ¼ cup
  • Salt - 1 tsp.
  • Vanilla extract - 1 tsp.
How to Prepare
Take a saucepan and add the milk, along with two tablespoons of butter. Heat the milk on low heat. In another bowl, beat the eggs (on high speed) with two cups of sugar, for around ten minutes; or till the mixture turns fluffy and increases in volume. Now, lower the speed of the beater, and slowly add vanilla and the lukewarm milk that is heated with butter. Mix well and keep aside. Now, combine the flour with baking powder, cocoa powder and salt; and sift the mixture two to three times. Add the flour into the butter-sugar batter. Beat the mixture thoroughly, till the batter acquires a marbled texture and glossy finish. Use the remaining butter to grease the cake pan, into which, you have to sprinkle some sugar, before pouring the cake batter. Bake the batter for around 30 minutes, in the oven that is preheated to 350° F. Let the cake get cool for ten minutes, before serving.
