It is really easy to make sponge cakes, but you must know the right method to come up with a perfect one. This article provides some recipes for making these cakes at home.

Sponge cakes are well-known for their soft, light and fluffy texture. These cakes are porous like sponges, and hence the name, sponge cakes. Basically, sponge cakes are made of eggs, flour and sugar; but there are numerous versions that require other ingredients too. It is said that, the sponge-like texture of the cake is due to the use of eggs.

Sponge Cake Recipe from Scratch

Ingredients

  • Plain flour – 5.2 ounces
  • Caster sugar – 8 ounces
  • Eggs (large) – 3
  • Warm water – 75 ml
  • Baking powder – 1 tsp.

Procedure
Preheat the oven to 375°F. Separate the egg yolks and beat them with sugar for around two to three minutes. Make the mixture fluffy, by adding the warm water, and beat it for another ten minutes. Keep it aside, and sift the flour along with the baking powder, two to three times. Combine the mixture with the flour, which has to be added in small batches. You may also add a teaspoon of vanilla extract to enhance the flavor. Whisk the egg whites, till firm peaks are formed. Gently fold in the egg whites to the flour mixture, and pour it into a non stick baking pan. Bake for around 30 minutes.

Lemon Sponge Cake Recipe

Ingredients

  • Plain flour or cake flour – 5.2 ounces
  • Caster sugar – 7 ounces
  • Medium-sized eggs – 3
  • Baking powder – 1 tsp.
  • Lemon juice – 1 tbsp.
  • Lemon extract – ½ tsp.
  • Milk (warm) – 6 tbsp.
  • Salt – ½ tsp.

Procedure
Preheat the oven to 350°F. Sift the flour, along with baking powder and salt. Keep the sifted flour aside. Take a bowl and beat the eggs, till they get fluffy. Add sugar, lemon juice and lemon extract to this mixture, and combine well. Add the sifted flour in small batches and blend the mixture. Add warm milk gradually, and mix well. Transfer the mixture to a cake tin. Bake for around 45 to 50 minutes. Before removing the cake from the oven, make sure that it has turned golden brown, and has also become firm. Keep the cake tin in an inverted position, till it gets cool. Remove the cake, once it becomes cool.

These recipes are simple and easy to prepare. You need only a few ingredients to prepare a sponge cake. Once you get the hang of it, you can try complex recipes too.
