These are edible, and their surface is often smooth and covered with small or large warts. The color of these mushrooms is normally white, and they are round. Often, they do not have a stem, and may be attached to the ground. When you decide to use these in your recipes, it is important to undertake the know-how of their identification.   • 1 pound Puffball Mushrooms
  • Milk, 1 quart
  • Corn Kernel, ½ cup
  • Finely chopped onion, 1
  • Butter, 1 stick
  • Oregano, ¼ tsp
  • Salt and Freshly Ground Pepper to taste
  • Slice the mushrooms into quarters if they are not very big in size.
  • In a saucepan, add butter and onions.
  • Let the onions cook till they are soft and translucent.
  • Then add the mushroom slices along with corn kernel, salt, oregano, and freshly ground pepper.
  • When they are well mixed with the onion, add milk to the mixture.
  • Let the soup simmer for 8-10 minutes, till the desired consistency is reached.
  • Serve hot, garnished with basil leaves.

This sauce can be used in a number of different ways. Although the name says sauce, it is actually a kind of puffball mushroom curry, as it can also be used along with the main course.

  • Sliced mushrooms, 4 ounces
  • Cream of Chicken and Herbs soup, 1 can
  • White wine, ½ cup
  • Worcestershire sauce, 1 tbsp
  • Finely chopped onion, 1
  • Sliced garlic, 1 clove
  • Salt, ¾ tsp
  • Pepper, ¼ tsp
  • In a saucepan, combine chicken and herbs soup with Worcestershire sauce and white wine.
  • When it comes to a rolling boil, add onions, mushrooms, and garlic.
  • Let the mixture simmer for some time. Add salt and pepper to the sauce.
  • Stir well, and the sauce is ready.

This could be made in large quantities for a sumptuous dinner.

  • Puffball Mushrooms, 2
  • Risotto Rice, 1 cup
  • Garlic, 3 cloves
  • Butter, 1 stick
  • Onion, 1
  • White wine, 250ml
  • Vegetable or Chicken Stock, 900ml
  • Asparagus Spears, 15
  • Olive Oil, 1 tbsp
  • Salt and Pepper to taste
  • Clean the mushrooms by peeling off the outer skin, and cut them into thin slices.
  • Chop the onion and garlic fine.
  • In a pot, add olive oil, and fry onion slices along with garlic till they are translucent.
  • After the onion is cooked, add risotto rice and mushrooms. Keep this for 5-6 minutes.
  • Now, add white wine to the rice.
  • After the wine is absorbed, add stock, salt, and pepper.
  • Cover and let it cook for 20 minutes, till it is done.
  • Add butter in a frying pan, and fry asparagus gently in it.
  • Serve risotto rice with fried asparagus.
