Pistachio cakes are not only healthy, but they are also very tasty. They are easy to bake, and also very economical, as the ingredients are easily available.

Cakes make some of the best desserts that can be served at parties or functions. Round cakes or cupcakes, whatever may be the form, they are just delicious. Though you get ready-made cakes in the bakery, preparing a cake by yourself has its own fun and satisfaction. Moreover, since the ingredients are easily available, you also reduce much of the expenditure.
Now, you have too many flavor options when you want to prepare a cake and selecting one can be a bit confusing. Pistachio cakes are favored by many due to their unique flavor and texture. Given below are two recipes for the same.
Simple Recipe
  • White Cake Mix, 18 oz.
  • Instant Pistachio Pudding, 2 small package
  • Lemon-Lime Soda, 1 cup
  • Vegetable Oil, 1 cup
  • Eggs, 3
  • Walnuts, 1 cup (chopped)
  • Cold Milk, 1½ cup
  • Cream Whip, 8 oz.
Out of the two instant pistachio pudding, you are going to require one for frosting. So, it aside. Now, take a medium-sized bowl and add white cake mix, one small package pistachio pudding, vegetable oil, lemon-lime soda, and eggs and mix them properly. Beat this mixture for at least 2 minutes at a medium speed. Add the chopped walnuts into this mixture. See that the walnuts are chopped finely. Take a baking pan of appropriate size and apply butter to its surface.
Pour the mixture into this baking pan and bake the pistachio cake for 45-50 minutes at 350ºF. Until the cake bakes, prepare the frosting. In a medium-sized bowl add milk, one small package of pistachio pudding and cream whip and beat the mixture for two minutes. Once the cake is baked, pour the whipped frosting over the cake and spread it systematically. Garnish the cake with your favorite topping. You can use finely chopped pistachios, grate some chocolate bar, mint leaves, etc. Keep the cake in the refrigerator for half an hour before cutting it.
Recipe with Jello
  • Instant Jello pistachio pudding mix, 1 package
  • Yellow cake mix, 1 package
  • Almond Extract, ½ tsp.
  • Eggs, 4
  • Water, 1¼ cups
  • Oil, ¼ cup
  • Green food coloring, 7 drops
In a medium-sized bowl, add all the above listed ingredients. With the help of an electric blender, blend the mixture for at least 2 minutes. Take a baking pan and grease with butter. Pour the blended mixture into the baking pan and bake the cake for 50-55 minutes at 350ºF. Once the cake is baked leave it to cool for 15-20 minutes and serve it with your favorite frosting. The food coloring used in this cake recipe is optional.
