Even though after eating chicken, in a form, I get so stuffed that I can't move a muscle, I can't help but think of it as one of my comfort foods. Give chicken to me in any form, grilled, barbecued, stir-fried, or boiled, I will eat it; you can count on that. Plus, there are so many flavors that makes eating chicken a thing of heaven. But by all time favorite, must have, style of preparing chicken is hot in the oven. Cooking chicken in the oven is one of the quickest and easiest way to make delicious lunch or dinner.
Chicken Drumsticks
  • Chicken drumsticks, skinless, 24
  • Eggs, 3
  • Cornflakes crumb, 2 cups
  • Parmesan cheese, grated, ½ cup
  • Salt and cayenne pepper, for taste
Before we start the recipe, set the oven temperature at 350ºF. Take 2 roasting pans and line them with aluminum foil and coat with vegetable oil. In a bowl, combine cornflakes crumb, salt, cayenne pepper, and Parmesan together. Beat the eggs in another bowl. Now dip chicken drumsticks in egg first and then roll in the cornflakes crumb mix.
Directly place the drumsticks in the pans and coat them individually with vegetable oil. Place the pans in the oven, and let the chicken cook for about 1 hour, without turning them. Then, lower the temperature to 180ºF for 10 minutes. Remove the pans, and serve the chicken warm.
Chicken Wings and Thighs
  • Chicken wings and thighs, rinsed, boned, 4
  • Lemon wedges, 4
  • Garlic clove, 2
  • Parsley leaves, 2 cups
  • Breadcrumbs, seasoned, ½ cup
  • Olive oil, 4 tablespoons
  • Lemon zest, ½ teaspoon
  • Salt and black pepper, for taste
Set the oven temperature at 400ºF. Chop the garlic and parsley in a bowl, and add breadcrumbs, lemon zest, salt, and black pepper in it. Add 2 tablespoons oil to the mixture, and combine properly. Place the chicken in a baking pan, and coat it with this mixture. Drizzle the rest of the olive oil, and place in the oven to bake for about 25―30 minutes. Once the chicken is cooked, serve with lemon wedges.
Chicken Breasts
  • Chicken breast halves, skinless, boneless, 4
  • Green peas, frozen, steamed, 2 cups
  • Instant oats, ⅔ cup
  • Dijon mustard, 2 tablespoons
  • Garlic powder, 1 teaspoon
  • Onion powder, 1 teaspoon
  • Mustard powder, 1 teaspoon
  • Paprika, 1 teaspoon
  • Oregano, dried, 1 teaspoon
  • Thyme, dried, ½ teaspoon
  • Salt and black pepper, for taste
Set the oven temperature for chicken at 400ºF. Use vegetable oil to coat a baking dish. In a plastic bag, mix in garlic powder, onion powder, mustard powder, paprika, oats, oregano, thyme, salt, and pepper. Use the Dijon mustard to brush the chicken breast and then coat with the dry mixture. With the tongs, take the coated chicken breasts, and place on the baking dish.
