Although the traditional quesadilla is stuffed with cheese, in recent times the original recipe has undergone variations outside Mexico and is stuffed with ingredients other than cheese. The stuffing mainly includes pumpkin flower, spinach, mushrooms, beans, sausages, chicken, carne asada, ham, refried beans, sour cream, avocado or guacamole, potatoes, eggs, hamburger, shrimp, bacon, and even salsa. Apart from these ingredients, another major factor that enhances the savor of this exotic dish is the quesadilla sauce. The dish is often served with a special sauce prepared from mayonnasie, pepper, jalapeno, garlic, and many other spices. Most people usually think that to enjoy the traditional flavor of this sauce one has to go to a Mexican restaurant, as preparing it at home can be very difficult and time-consuming, which is not really the case. Traditional Quesadilla Sauce

Ingredients:
  • ¼ cup mayonnaise
  • 2 teaspoon minced jalapeno slices (nacho slices)
  • 2 teaspoon juice from jalapeno slices (nacho slices)
  • ¾ teaspoon sugar
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoonteaspoon garlic powder
  • A dash of salt
Preparation:

Take a mixing bowl and combine all the ingredients together. Cover and refrigerate overnight. Use one teaspoon of this sauce per tortilla quesadilla.

Low Fat Taco Bell Quesadilla Sauce

Ingredients:
  • ¼ cup fat-free mayonnaise
  • 2 teaspoon minced jalapenos
  • 2 teaspoon jalapeno juice
  • ¾ teaspoon sugar
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoonteaspoon salt
Preparation:

In a large mixing bowl, combine all the ingredients well. Cover and refrigerate overnight. Use one teaspoon of this sauce per tortilla quesadilla.

Chicken Quesadilla Sauce

Ingredients:
  • ¼ cup mayonnaise
  • 2 teaspoon jalapeno juice, from minced jalapenos
  • ¾ teaspoon sugar
  • ½ teaspoon cumin
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoonteaspoon garlic powder
  • 2 chicken breasts
  • Cheddar Cheese
  • Monterey Jack Cheese
  • Tortillas
Preparation:

Cook the chicken either by boiling for 20 minutes or by grilling for about 30 minutes. Take a bowl and combine mayonnaise, jalapeno juice, sugar, cumin, cayenne pepper, and garlic powder. Cover the mixture and refrigerate. In another bowl, shred both cheddar and Monterey Jack cheese and mix them well. Take a skillet and heat a bit of butter or olive oil in it. Fold the flour tortilla in half and put chicken and cheese on one side. Transfer the tortilla in the skillet and drip the sauce on the empty side. Press together with a spatula until the cheese melts and then flip to the other side. Serve the prepared chicken quesadilla with the remaining sauce and enjoy.
