Fried Cod Fish
Ingredients
- 6 cod fillets
- 1 cup, white wine
- 2 tablespoons, garlic (minced)
- 1 cup, all-purpose flour
- 2 tablespoons, paprika
- 1 egg
- 2 tablespoons, ground black pepper
- 2 cups, cooking oil
- Salt, to taste
Wash the cod and pat dry it. Season it with salt and pepper and set it aside. In a bowl, combine flour, minced garlic, paprika, salt and pepper. Sift in the beaten egg and mix it well with the dry ingredients. Pour the wine until a thin batter is formed. It should be thin, because the idea here is just to dip the fish in it to get the flavor and not coat it. Heat the oil in a deep heavy skillet, when the oil starts smoking, reduce flame, and drop batter-dipped fillets one at a time. Fry until crisp and golden brown. Place on paper towels, and serve hot with fresh green salad.
