Butterfly pork chops can be cooked in many ways. This article provides you some tips and guidelines for baking them.
A butterfly pork chop is a thick chop taken from the pork loin eye. It is cut in such a manner that when opened, it resembles a butterfly in shape. You may either buy them in pre-cut form, or else cut them on your own. If you go for the latter method, you require pork loin chops that are more than two inches in thickness. You have to make a cut (horizontally) through its side, stopping just before you reach the other side. Leave it uncut, so that when you open the cut, you will have two wings on opposite sides. As the shape resembles butterfly wings, it is called a butterfly cut. They are perfect for making delicious oven-baked pork chops.
Method I
Ingredients
- Butterfly pork chops – 12
- Eggs – 4
- Seasoned bread crumbs – 4 cups
- Olive oil – 8 tbsp.
- Condensed cream of mushroom soup – 2 cans
- Garlic powder – 2 tsp.
- Flour – ½ cup
- Milk – 1 cup
- White wine – 2/3 cup
- Seasoning salt – 2 tsp.
How to Prepare
Rinse and clean the butterfly pork chops. Once done, pat them dry and apply garlic powder and salt. Beat the eggs in a bowl and keep aside. Coat the chops with flour and dip them in eggs, before covering them with a generous amount of bread crumbs. Now, heat olive oil in a pan and fry the pork chops for around ten minutes (five minutes for each side). Remove the browned pork chops from heat and place them in a baking dish. Cover the dish with aluminum foil and bake for around an hour, in the oven that is preheated to 350° F.
In the meantime, you can prepare the sauce by combining the cream of mushroom soup, white wine and milk in a bowl. Once you take out the pork chops, remove the foil and pour the mushroom soup mixture over the baked chops. Cover the baking dish with aluminum foil, and bake for another 30 minutes, at a temperature of 350° F. Your butterfly pork chops can be served hot, as you take them out of the oven.
Method II
