  • 4 cups, flaked, sweetened coconut
  • 2 cups, self rising flour
  • ½ cup, unsalted, softened butter
  • ½ cup, sugar
  • 2 eggs
Method of Preparation

Preheat oven to 350°F before starting to making the bread. Take a 9- by 5- by 3-inch loaf pan. Butter and flour the pan and make sure you knock out excess flour. Now, take a large shallow baking pan that is about 1 inch deep. Spread about 3 cups of coconut in it. Place it in the oven and toast it till golden brown for about 20 to 25 minutes. Make sure you keep a watch as the flakes on the edges may burn quickly. Allow the pan to cool for about 15 minutes on a rack. Then, grind them in a food processor to form a coarse meal. Let the oven on while you proceed further with your bread recipe.

Take a large bowl and mix the self-raising flour, ground coconut and the remaining untoasted coconut. Beat butter and sugar in another bowl using an electric hand mixer. Keep the speed at medium and beat until the butter is creamy. To this add the eggs one at a time and beat thoroughly . In the flour mixture add one cup of water and whisk properly. Then add you egg mixture and blend till smooth.

Pour this batter into the loaf pan that has been buttered. Use a spatula to smooth the top and place the pan in the middle of the oven. Bake for about 1 hour 10 minutes. A wooden skewer should be inserted in the center to check if the bread has been baked evenly. Cool the bread on a rack for about 10 to 15 minutes. Then, remove from pan and place the right side up on the rack to cool for the next 2 hours. Once the bread is cool, cut it into slices and enjoy your coconut bread.
