Though you can easily find store-bought ones, homemade ravioli is always preferred, as you can experiment with a wide range of filling and sauces.
In fact, the meaning of the term ‘ravioli’ in Italian, is ‘to stuff’. Fillings play a vital role, as far as this dish is concerned. Ravioli can be made with a wide range of fillings, like cheese, beef, chicken, seafood, vegetables, and mushrooms.
Cheese Ravioli Filling
Recipe 1: You may go for a basic and simple cheese ravioli filling with ricotta cheese, Parmesan cheese, egg yolks, and salt and pepper. In order to prepare this filling for eight servings, blend a cup of grated Parmesan cheese, along with 16 ounce ricotta cheese, and salt and pepper (as per taste). When half done, add two egg yolks and blend well. Now, place small amounts of filling on the rolled sheets of pasta dough, and brush with whisked egg white, before covering them. You may sprinkle some flour on the stuffed ravioli squares, before boiling.
Recipe 2: Another type can be prepared with three types of cheese (ricotta, Parmesan, and Mozzarella), along with spinach, parsley, and nutmeg. In order to prepare eight to ten servings, you need the following ingredients.
- Spinach bunch – 2
- Chopped parsley leaves – 1 tsp.
- Ricotta cheese – 16 ounces
- Grated Parmesan cheese – ½ cup
- Shredded mozzarella cheese – ½ cup
- Egg whites – 2
- Nutmeg powder – ¼ tsp.
- Salt and White pepper – 1 tsp. each
In order to prepare this recipe, wash and cook the spinach. Once done, drain and chop it properly; and mix with the other ingredients. Your filling is ready.
Mushroom Ravioli Filling
Recipe 1: For preparing this filling, you require six ounces of skim ricotta cheese, eight ounces of button mushroom, a small bunch of chives, one shallot (medium-sized), and 1½ tablespoon of salt. Finely chop the button mushrooms, chives, and shallot, in a food processor. Add a tablespoon of butter to a pan, and cook the minced ingredients. Stir the contents in between, till the mushrooms change color to a golden brown; and the shallots become almost transparent. Remove the pan from heat, and allow the contents to cool. Place small amounts of this filling over the rolled pasta dough sheets. Top each of them with a teaspoon of ricotta cheese, before covering.
Recipe 2: You may also choose other types of mushrooms, or a mix of different mushrooms for making ravioli filling. This recipe requires the below said ingredients.
- Portobello mushrooms – 7 ounces
- Garlic – 2 cloves
- Flat parsley – 5 sprigs
- Mozzarella cheese – ½ cup
- White onions – 5
- Olive oil – ¼ cup
- Salt and Pepper – As per taste
Grill the mushrooms, and caramelize the onions. Once done, mince them in the food processor, along with parsley, garlic, olive oil, cheese, salt, and pepper. You can use this mixture as the filling for ravioli.
