Easy Multi-Bean Soup
Ingredients
  • Dried mix beans, 1 pack
  • Chopped celery, 8 stalks
  • Diced onions, 4
  • Minced garlic cloves, 8
  • Olive Oil
  • Peeled and chopped carrots, 9
  • Ham seasoning, 1 tsp

Preparation

Soak beans overnight in a covered bowl. Place a large soup pot on a medium flame and add olive oil in it. Let it heat for some minutes and then add the beans, minced garlic and onions. Mix well and after some minutes add carrots and celery. Pour two quarts water and add some ham seasoning. Bring the mixture to a boil and simmer it for at least 2 hours. Serve hot.
Quick Multi-Bean Soup
Ingredients
  • Drained black beans, 1 can
  • Drained pinto beans, 1 can
  • Drained kidney beans, 1 can
  • Diced onions, 2
  • Diced tomatoes, 5
  • Chopped green chilies, 7
  • Chopped cilantro
  • Vegetable oil, 2 tsp
  • Chili powder, 2 tsp
  • Chicken broth, 2 cups

Preparation

Place a large saucepan on medium heat, add in the onions, chili powder and oil. Cook these items for 5 to 10 minutes. Now add in the tomatoes, beans, chilies and chicken broth. Bring the mixture to a boil and then simmer it for at least 30 to 40 minutes. Turn off the flame and garnish the soup with cilantro.
Ham and Bean Soup
Ingredients
  • Smoked ham bone, 1 lbs
  • Dry mixed beans, 1 lbs
  • Large onion chopped, 1
  • Peeled and chopped potatoes, 2
  • Peeled and sliced carrots, 4
  • Crushed garlic cloves, 3
  • Sliced celery stalks, 4
  • Bay leaves, 4
  • Ham soup base, 1 tsp
  • Thyme, ½ tsp
  • Fresh ground pepper, ½ tsp
  • Cayenne pepper to taste

Preparation

Soak the beans overnight in a covered pan and don't drain them. In a saucepan add chicken broth, beans with water and bring the mixture to a boil. Now add the ham bone, onions, garlic, thyme, pepper, bay leaves and celery. Lower the heat and cover the pot. Let it simmer for an hour until the ham pieces become tender. Remove the bone from the soup and let it cool. After some time remove all the meat from the bones and add it in the soup. Toss in the potatoes and carrots. Now remove at least a cup of the mixture and add the soup base in it. Mix well and add this mixture back to the soup. Cover the saucepan for at least 40 minutes and let it simmer. Serve hot.
