However, certain people are not able to ingest it, because of various personal or professional problems. In that case, a healthy brunch would be a good idea to satiate those hunger pangs and not feel guilty about missing your breakfast. Scones
Ingredients
- All-purpose Flour, 2 cups
- Sugar, ½ cup
- Salt, ½ tsp.
- Raisins, ½ cup
- Sour Cream, ½ cup
- Baking Powder, 1 tsp.
- Baking Soda, ¼ tsp.
- Egg, 1
- Unsalted Butter, 8 tbsp. (frozen)
Preparation
Preheat the oven to 400° F, but before you do so, you need to place the baking rack in the center of the oven. Take a medium bowl and mix flour with baking powder, baking soda, and sugar. Sprinkle some salt, as per the taste required. Then, grate butter in the flour mixture. Blend this mixture well, till it becomes coarse. Add the raisins. Your next step would be to mix the egg with sour cream in a bowl. Blend well, till it turns into a smooth mixture.
Stir the sour cream mixture into the flour mixture prepared earlier. Knead this dough and shape it into a ball. Place it on a lightly floured surface. Pat the dough so that it forms an 8 inch circle. Sprinkle 1 tsp. sugar above this. Now, cut the circle into 8 triangular shapes. These triangles should be placed an inch apart on the cookie sheet. Bake these till they turn golden brown. Serve them warm, with a hot cup of tea or coffee.
Chocolate Muffins
Ingredients
- Baking Cocoa, ⅔ cup
- Eggs, 2
- Flour, 2 cups
- Sugar, ½ cup
- Milk, 1⅓ cups
- Vegetable Oil, ⅓ cup
- Vanilla, 1 tsp.
- Salt, ½ tsp.
- Baking Soda, 2 tsp.
- Chocolate Chips, 1 cup
Preparation
Preheat the oven to 400° F and coat the muffin tins with cooking spray. Meanwhile, in a large bowl, combine the flour, baking soda, cocoa, and vanilla. Sprinkle some salt, sugar, and add ½ cup of chocolate chips. Now, take a separate bowl and whisk the eggs with milk. Add this mixture to the other ingredients. Pour the batter evenly into the pan and sprinkle the remaining amount of chocolate chips over this. Bake it for 20 minutes and then let it cool down. Remove from pan and serve with a scoop of vanilla ice cream.
Stuffed French Toast
Ingredients
For the Filling
- Cream Cheese, 8 oz.
- Pecans, ¼ cup (finely ground)
- Apricot Preserves, ¾ cup (You can use strawberry jam)
For the Batter
- Eggs, 4
- Milk, ½ cup
- Vanilla, 1 tbsp.
- French Bread or Italian Bread, 1 loaf
- Butter, 2 tbsp.
Preparation
Mix cream cheese, jam, and the finely ground pecans in a bowl. Then, cut the bread into diagonal pieces. Next, you need to cut a small area of the bread from each slice and place the cream cheese mixture on it. Mix eggs, vanilla, and, milk in a mixing bowl. Then, heat a frying pan on medium heat. Melt butter in a pan. Dip each toast in the egg batter and then place them on the pan. Cook till both sides turn a shade of brown and then serve it hot.
