Miso Risotto
While traditional risotto relies on dairy-based butter and parmesan cheese to achieve umami flavor, this vegan alternative uses miso butter (a blend of vegan butter and white miso paste) for its robust, savory taste. Plus, earthy mushrooms add another powerful layer of umami!
Use arborio rice in this risotto recipe–an Italian short-grain variety high in starch that makes an excellent base. Arborio can be found at most supermarkets and specialty stores.
Heat olive oil in a large saucepan over medium-high heat and add the garlic and mushrooms, cooking until softened and lightly browned.
Gradually stir in your broth until all of it has been absorbed and the rice has reached tenderness.
Stir in the white miso and add salt to taste before stirring in green onions for garnish. Additionally, this risotto would pair perfectly with poached eggs, roast winter vegetables or delicate greens!
