Warm the honey and lavender together in a small saucepan (one without aluminum is best). Pour out into a large bowl and allow it to steep for approximately one hour before pouring back into the saucepan and heating over low heat, stirring continuously with a heatproof spatula, until thick enough to coat your spatula.
Whisk egg yolks in a medium bowl before gradually whisking the hot mixture in and stirring to incorporate. Slowly drizzle heavy whipping cream and remaining two tablespoons of lavender flowers. Transfer sherbet to a freezer-safe container and press plastic wrap against its surface before placing it in the freezer for one to four hours until chilled.
