1. Thai Style Peanut Pork
Pork tenderloin makes for a delicious protein-packed main course, perfectly complementing bold flavors while soaking up its peanut sauce. Indonesian style peanut sauce calls for plenty of ground coriander as well as sweet, salty, and coconut milk elements; for an enhanced sauce use full fat coconut milk but low-fat options will still work just as well.
Slow cooker is your answer for an effortless dinner: tender pork in an Asian-influenced peanut sauce is ready when you come home! Accompanied by rice for an enjoyable one-dish dinner.
Coat your slow cooker with cooking spray, then combine pork, bell pepper strips and teriyaki sauce; stir well. Cover and cook on low for 8 hours before tossing in green onions and garlic right before serving – for optimal results, serve with rice and lime wedges, leftovers can make great additions to Bahn Mi sandwiches! For grillers out there: This recipe can also be done on bamboo skewers threaded onto hot coals, under the broiler or on stovetop grill until cooked through and lightly browned for best results!
2. Pork and Vegetable Stir-Fry
This simple pork stir fry dinner can be put together quickly in one large skillet – making it perfect for busy weeknights when time is of the essence! Enjoy it over rice or noodles as an instantaneous complete meal.
Start by whisking the sauce ingredients together. Next, heat some oil in a large skillet or wok and add your pork for about five minutes – this should bring it up to temperature without being raw anymore. Remove it from the heat source and set it aside.
Use one skillet to saute vegetables and edamame. Once everything is done cooking, combine with sauce for optimal results and toss. Garnish as desired with crushed red pepper flakes or chopped peanuts for additional crunch! This sauce combines soy sauce, honey, garlic and ginger for an appealing combination of sweet, salty, spicy flavors that pairs perfectly with all types of vegetables.
3. Pork and Bean Chili
This soul-satisfying pork chili will warm you from the inside out! Enjoy tender pieces of pork shoulder, spicy chorizo and bacon, along with zesty spices and beans in this satisfying and healthy dish. Lean pork tenderloin contains higher levels of protein, fiber and folate than traditional chili options while pinto beans provide plenty of nutrients and make this an abundantly healthy dish!
Heat the oil in a large heavy-bottomed Dutch oven over moderately high heat until shimmering, adding the pork. Cook without stirring until its bottom surface has turned golden-brown; about 8 minutes. Stir in chile powder, oregano and cumin until fragrant (approximately 1 minute), before serving.
After taking off from the heat, transfer the pork to a cutting board and shred with two forks before returning it to the pot. Add beans, chicken broth and beer and bring to a boil before reducing to a bare simmer – stirring frequently until chili thickens slightly – about 1 1/2 hours later.
4. Pork with Vegetables
As most Chinese dishes adapted to American dining are overly sweet and oily, this slow-braised version of Pork with Vegetables utilizes minimal amounts of oil while producing a delectably flavorful dinner. Pork becomes irresistibly tender while ginger, garlic and star anise create an aromatic broth for serving with brown rice or stir-fried napa cabbage.
Heat 1 tablespoon oil over medium-high heat until hot. Season the pork with salt and pepper before adding it to the skillet; continue cooking without stirring until browned on both sides, about 2 minutes. Transfer to a plate and keep warm before consuming.
Add remaining tablespoon of oil to the skillet, and stir-fry red pepper, mushrooms and scallions until tender, approximately three minutes. Return pork to skillet before stirring in chicken broth mixture and cornstarch thickener, until sauce thickens. Combine vegetables before tossing into final dish – serve with egg drop soup as a complete meal!
