For anyone who enjoys fries, Satusuma-imo (Japanese sweet potato sticks) offer an exquisite alternative that’s quick and easy to make at home using either oven or air fryer. Simply toss sweet Japanese yams in sesame oil before roasting for crispy golden-brown perfection while you prepare wasabi aioli as a quick dip for this delectable side dish that makes an excellent healthy alternative and also serves as an introduction for children to new veggies!

This vegan recipe is naturally gluten-, soy-, and nut-free. Try our Vegenaise Wasabi Aioli or use any sauce of choice as a dipping sauce! Note: While this recipe calls for purple sweet potatoes, orange or white sweet potatoes would work just as well; for optimal results these fries should be baked evenly across one even layer so as to achieve maximum crispiness and avoid burning.

Purple carrots offer a delicate peppery taste, pairing perfectly with lemon and black pepper. This delicious dish makes an easy weeknight dinner option and keeps well in the refrigerator!

If you don’t have purple carrots on hand, any color carrot will work just as well here, with the miso glaze adding an irresistibly savory flavour. Feel free to swap out pearl barley for freekeh or bulgur and replace the snow pea sprouts with broccoli sprouts or microgreens for even more variation in this delicious dish!

Miso Risotto

While traditional risotto relies on dairy-based butter and parmesan cheese to achieve umami flavor, this vegan alternative uses miso butter (a blend of vegan butter and white miso paste) for its robust, savory taste. Plus, earthy mushrooms add another powerful layer of umami!

Use arborio rice in this risotto recipe–an Italian short-grain variety high in starch that makes an excellent base. Arborio can be found at most supermarkets and specialty stores.

Heat olive oil in a large saucepan over medium-high heat and add the garlic and mushrooms, cooking until softened and lightly browned.

Gradually stir in your broth until all of it has been absorbed and the rice has reached tenderness.

Stir in the white miso and add salt to taste before stirring in green onions for garnish. Additionally, this risotto would pair perfectly with poached eggs, roast winter vegetables or delicate greens!
