Recipe 1 – Cake

Ingredients

  • Caster sugar – 275 gm
  • Self-rising flour – 275 gm
  • Baking margarine (soft) – 225 gm
  • Orange – 1 (for making pulp)
  • Eggs (large) – 4
  • Butter (soft) – 50 gm
  • Baking powder – 3 teaspoons
  • Ground cinnamon – 1 teaspoon
  • Mixed spice – 1 teaspoon
  • Icing sugar – 175 gm

How to Prepare
Take the whole orange and wash it properly. Now, boil it in a saucepan with enough water to cover the fruit. As we are using the whole orange in this recipe, choose a fruit with a very thin skin. Cover and cook the orange for around one and half hours. As the fruit gets soft and cooked, remove from the heat and cut it into large chunks, along with the skin. Remove the seeds and blend it. As the puree turns grainy, take out two tablespoons of it and keep aside. Now, run the machine till the puree turns smooth. Add the remaining ingredients, except butter and icing sugar (along with the reserved orange pulp).

Now, blend the ingredients to form the cake dough. Take two sandwich tins (200 mm) and line them with greaseproof paper. Pour the dough into these tins and bake on the grid shelf on the floor of the baking oven, for around thirty minutes. Once done, take out the cakes and let them cool. Meanwhile, prepare the icing by mixing butter, reserved orange pulp and icing sugar. All you have to do is to spread this icing on top of one cake and place the other over it. Spread the remaining icing over the upper one and your cake is ready.
