This homemade ice cream recipe begins with milk and heavy whipping cream, before adding sugar, vanilla extract and pinch of salt for additional flavor. By including egg yolks for richer and creamier texture than traditional vanilla ice cream. Try it for any special occasion or relaxing weekend dessert.

Lavender Honey Ice Cream

Honey adds richness, while lavender – often considered perfumey or soapy — offers subtle floral flavors that go perfectly with the delicate sweetness of honey. This sophisticated ice cream will not only impress adults but also delight kids!

Warm the honey and lavender together in a small saucepan (one without aluminum is best). Pour out into a large bowl and allow it to steep for approximately one hour before pouring back into the saucepan and heating over low heat, stirring continuously with a heatproof spatula, until thick enough to coat your spatula.

Whisk egg yolks in a medium bowl before gradually whisking the hot mixture in and stirring to incorporate. Slowly drizzle heavy whipping cream and remaining two tablespoons of lavender flowers. Cover and chill overnight before straining before churning in an ice cream maker according to manufacturer’s instructions. You may add purple food coloring for even deeper lavender color if desired and serve affogato-style with an espresso shot poured overtop for maximum effect!

To create this sherbet, combine strawberries and sugar in a non-reactive saucepan over medium heat until the sugar has completely dissolved and strawberries softened, then remove from heat and puree in a blender. Combine with sherbet base until thoroughly mixed before placing the sherbet into your ice cream maker to begin churning – about 20-30 minutes should do it!

Transfer sherbet to a freezer-safe container and press plastic wrap against its surface before placing it in the freezer for one to four hours until chilled. To create chocolate sorbet, whisk together sugar and cocoa before bringing 600ml water to a simmer in a medium saucepan. Whisk the sugar-cocoa mixture in and allow it to simmer, covered, for around five minutes before removing from the heat and mixing in chocolate until fully melted.

Pour the mixture into an ice cream maker and spin until frozen. Or you could freeze in a freezer-safe container instead, whisking every half hour to break up ice crystals and introduce air. If using this latter approach, be sure to use bowl-shaped containers.
