Grilled Sitka Salmon

Grilling salmon is an effective way to add both flavor and texture to any recipe, especially those featuring center cut fillets with more skin than thinner fillets with less skin. When grilling, always start with skin side down to prevent sticking and ensure an even cook.

Make sure your grill is set up before starting to cook, and oil the grates well if using a gas grill to avoid flare-ups. While your grill heats, prepare your barbecue sauce by mixing fruit preserves and vinegar together in a blender or mini chopper, brush the salmon generously with glaze before placing skin side down on your grill for 3 minutes per side until flakes easily with a butter knife and has turned light opaque pink in color.

Serve this creamy salmon piccata as part of an elegant meal for special occasions or date night, served alongside rice or pasta, roasted vegetables or salad.

Season both sides of your salmon fillets evenly with salt and pepper before placing in a large skillet over medium-high heat; cook 4 minutes on each side or until just cooked through and golden in color. Transfer to a plate, covering it with foil to keep warm, before serving.

Add butter and olive oil to a pan; saute garlic for 30 seconds before stirring in flour for 1 minute, which should cook through before you add broth, heavy cream, lemon juice, pesto and salt; simmer, stirring continuously, until thickened before tasting and adjusting seasoning as needed. Place salmon fillets back into the pan; garnish with parsley before serving.
