Spicy Mexican Rice

Ingredients

  • Beef broth, 4 cups
  • Rice, 2 cups
  • Tomato sauce, ¼ cup
  • Hot chili sauce, ¼ cup
  • Cooking oil, 2 tablespoons
  • Mexican oregano, 1 teaspoon
  • Cumin powder, ¼ teaspoon
  • Green onion stalks, chopped, 2
  • Shallots, peeled and diced, 2
  • Jalapeño, seeded and diced, 1
  • Onion, peeled and diced, 1

Directions

When you need a side dish for steak fajitas, this spicy Mexican rice recipe is a perfect combination. First, take a pan to heat oil and saute onions. Next, add the shallots, jalapeño, green onions, and rice in. Stir properly and let the rice turn a bit golden. Then, add beef broth, chili sauce, cumin, oregano, and tomato sauce. Let the mixture come up to a boil on medium-high heat. Lower the heat to a simmer, cover the pan, and let the rice cook for about 15 minutes. Once the rice is tender and cooked completely, fork the rice to fluff it, and serve with your beef fajitas.

Sautéed Potatoes

Ingredients

  • Yukon Gold potatoes, 1 lb.
  • Olive oil, 4 tablespoons
  • Unsalted butter, 1 tablespoon
  • Rosemary sprigs, 3
  • Garlic cloves, 2
  • Salt and black pepper, for taste

Directions

When you need a potato side dish for Steak Diane, this sautéed potato recipe is a perfect combination. First, cut the potatoes in half (lengthwise) and boil them in cold salted water. When the potatoes turn tender, drain them, and keep on paper towels to soak excess water. Next, in a pan, add olive oil to turn hot. Add the cut side of potatoes in the pan.   • Yellow squash, sliced, 2
  • Zucchini, sliced, 2
  • Tomato, diced, 1
  • Onion, chopped, 1
  • Salt and black pepper, for taste

Directions

When you want side dishes for flank steak and side dishes for skirt steak, this grilled vegetables recipe is a perfect combination. In aluminum foil, drizzle 1 tablespoon olive oil. Add onion, garlic, and ½ teaspoon rosemary in it. Next, add zucchini, yellow squash, tomato, and mushrooms in. Drizzle the rest of olive in with salt, black pepper, and rosemary from top.
