Garlic Veggie Pasta Sauté

Ingredient

  • Cooked Pasta – ½ cup
  • Chopped Garlic – 5 to 6 cloves
  • Chopped Mushrooms – ½ cup
  • Chopped Tomatoes – ½ cup
  • Chopped Spinach – ½ cup
  • Butter – 1 teaspoon
  • Breadcrumbs – 2 teaspoons
  • Olive Oil

Procedure

Sauté the garlic in butter with other veggies, that is, tomatoes, mushrooms, and spinach. After sautéing it for a couple of minutes, toss it with the already cooked pasta, and to add the final touch to the side dish, drizzle some olive oil and sprinkle breadcrumbs over the mixture.

Green Rice

Ingredients

  • Rice – ½ cup
  • Pureed Spinach – 1 cup
  • Parsley – 1 cup
  • Diced Onion – ½ cup
  • Diced Tomatoes – ½ cup
  • White Wine – ¼ cup
  • Olive Oil
  • Salt and Pepper
  • Water

Procedure

Heat some olive oil in the pan, and sauté the diced onion for a minute or two. Add the rice to it, and sauté until it is coated well with oil. Now add in the wine. When you notice that the rice has absorbed all the wine, add the tomatoes, and season with salt and pepper. Add some water and cook until the rice turns tender. Add the spinach puree, combine it well with the rice, and cook for some time with the lid off. This will allow the excess water to evaporate. Take the pan off the fire, and add the parsley and a pinch of nutmeg if you’d like to bring in a different flavor. You could also garnish it with some juliennes of onion.

  • Bean Sprouts – ½ cup
  • Broccoli – 1 cup or 3-4 florets
  • Red Bell Peppers – ½ cup
  • Cooked Rice – ½ cup
  • Soy Sauce
  • Olive Oil

Procedure

All you need to do for this side dish is simply sauté the broccoli, bean sprouts, cabbage, and bell peppers together in some olive oil. Toss these sautéed veggies with cooked rice, and add the soy sauce as per your taste.

Quinoa salad

Ingredients

For the Dressing:

  • Olive Oil – 1/4 cup
  • Sliced Garlic – 1 clove
  • Lemon Juice – 1/2 cup
  • Golden Balsamic Vinegar – 1 tablespoon
  • Pure Honey – 1 teaspoon
  • Kosher Salt
  • Black Pepper

For the Salad:

  • Cooked Quinoa – 2 cups
  • Chopped Spinach – 2 cups
  • Chopped Cucumber or Broccoli – 1 cup
  • Halved Grape or Cherry Tomatoes – 1 cup
  • Avocado – 1
  • 2 Sliced Green Onions
  • Kosher Salt
  • Black Pepper

Procedure

Blend olive oil, garlic, lemon juice, vinegar, honey, salt, and pepper together in a small bowl.This procedure is meant for dressing. Also commingle quinoa, spinach, cucumber or broccoli, tomatoes,  chopped avocado, and green onions in another bowl for salad.
Mix the salad with the content of dressing and stir mildly until salad and dressing are properly combined. Season with salt and pepper to taste and serve it with salmon.
