Moroccan cuisine is very popular due to the diverse influences of various cultures on it. This cuisine shows a major influence of the native Berber cuisine. Green tea with mint is one of the most popular drinks seen in this culture.

Apart from green tea, one can see a variety of non-vegetarian items and delicious desserts that form an integral part of this cuisine. Well, if you are hunting for some authentic Moroccan dishes, then you will certainly find the recipes mentioned below very interesting.

Couscous with Orange Juice

This is one of the oldest dishes that belongs to this cuisine. Take a look at this interesting recipe.

Ingredients

  • Water, 2 cups
  • Olive Oil, 1 tbsp.
  • Fresh Orange Juice, 6 tbsp. (divided)
  • Orange Peel, 1 tsp. (finely grated)
  • Plain Couscous, 1½ cups
  • Salt and Pepper, as per taste

Preparation
Take a medium-sized saucepan and mix water, 3 tbsp. orange juice, and the orange peel. Bring all these ingredients to a boil. Then, add the couscous and cover the saucepan for sometime. Remove from heat and let the couscous absorb the liquid completely. Then, add 3 tbsp. orange juice and sprinkle some salt and pepper, as per your taste. Serve it warm.

Spicy Roasted Vegetable

Ingredients

  • Olive Oil, 4 tbsp.
  • Shallots, 2 lbs. (quartered)
  • Coarse Salt, 2 lbs.
  • Cumin, 4 tsp. (ground)
  • Coriander, 2 tsp. (ground)
  • Cinnamon, 1 tsp. (ground)
  • Unsalted Butter, ¼ cup
  • Sweet Potatoes, 2 lbs. (peeled and cut into portions)
  • Red Bell Peppers, 4 (cut into ½” thick strips)
  • Butternut Squash, 4 lbs. (peeled, seeded, and cut into ¾” portions)

Preparation

Preheat the oven to 375° F. Then mix the shallots with 1 tbsp. olive oil. Roast it in the oven for 25 minutes. Mix the bell peppers, salt, squash, sweet potatoes, coriander, and cinnamon. Add 3 tbsp. olive oil along with cumin. Add the roasted shallots. You would need to divide this between 2 large baking pans.

Add half the quantity of butter. Then, roast this in the upper and lower sections of the oven. You may need to switch off the oven occasionally to stir the same. Also remember to switch the position of the pans. Once the vegetables turn tender, garnish it with the remaining amount of butter and serve it hot.

Moroccan Fish

Ingredients

  • Extra Virgin Olive Oil, ¼ cup
  • Cumin, ¾ tsp. (ground)
  • Capers, 1½ tbsp. (drained)
  • Cinnamon, ½ tsp.
  • Tomatoes, 15 oz. (stewed and chopped)
  • Halibut, 6 oz. (1″ thick fillet cut into 4 pieces)
  • Salt and Pepper, as per taste

Preparation
Take a heavy skillet and heat some cumin in oil over medium heat. Ensure that you keep stirring it occasionally. Add some tomatoes along with capers and cinnamon. Sprinkle salt and pepper, to taste. Let it simmer while its kept uncovered. Keep stirring occasionally till the preparation thickens, for about 10 minutes. Meanwhile, pat the fish dry and add some salt and pepper. Cover the same and cook the fish for 10 minutes in a skillet. Serve it hot.
