Know How to Make the Popular Portuguese Sausage at Home

If you have tasted a sausage once, you are sure to have fallen in love with its distinct taste and flavor. Sausages are a part of traditional breakfast menu (as the English and Irish breakfast menu), and also of that of the traditional meal menu (like the German and Portuguese). Sausages can be made in many different types, and the recipes for making sausages vary from one nation to the other. The traditional Portuguese sausage, known as the Linguiça, is one of the most popular varieties of sausages. If you have tasted one, you will definitely wish to make it at home. Following are some easy and interesting recipes.

Portuguese Sausage Recipe

Garlic and paprika are the two most important ingredients used to cure this sausage. The Linguiça is also very popular in Goa (India) as Goa was a Portuguese colony earlier. The Portuguese sausage is usually smoked; but you can also grill it. The recipes mentioned below vary with respect to some ingredients and the preparation method.

  • 2 and ½ pounds of pork butt
  • 2 tablespoons of paprika
  • 1 tablespoon of minced garlic
  • 3/4 teaspoon of sugar
  • ½ teaspoon of freshly ground black pepper
  • 1 teaspoon of freshly ground white pepper
  • ½ teaspoon of crushed red pepper
  • 1 teaspoon of dried oregano
  • 1 teaspoon of vegetable oil
  • 1 tablespoon of red wine / apple cider vinegar
  • 1 tablespoon of salt

Method of Preparation
Firstly, you need to cut the pork into ½ inch pieces. Now, in a large bowl, mix pork, paprika, garlic, sugar, black pepper, white pepper, and red pepper. Mix all the ingredients well and divide into two equal parts. Next, put one part in the food processor and process until finely ground mixture is formed. Repeat the same with the second part. When the entire meat is finely ground; put it in a bowl and seal with plastic wrap. Refrigerate overnight. The next day, add wine or vinegar to the meat and mix well. At this point of time, you can test the meat for seasoning and adjust accordingly. When done, smoke the sausage in a preheated smoker for 1 and ½ hours. Your Portuguese sausage is ready!

  • 2 pounds of lean pork
  • 8 cloves of garlic
  • ¼ teaspoon of black pepper
  • ½ teaspoon of red pepper flakes
  • A pinch of paprika
  • 1 tablespoon of vinegar
  • 50 ml of cold water
  • 1 teaspoon of salt

Method of Preparation

Mix all the ingredients (except the pork) in a large bowl to form a homogeneous mixture. Cut the pork in small pieces and add to the above made mixture. Mix thoroughly to form a well mixed mixture. Now, cover the bowl and refrigerate for 2 days. After the prescribed time, take out the pork mixture. Now, stuff the pork mixture in casings and twist the casings into links of 8-10 inches. You should make sure that the casings are not overstuffed. Lastly, you should hang the sausages in a well-aired place in order to dry them.

Although the complete procedure of making sausages is very time-consuming, it is fairly simple and easy. And when you taste the fruit of your labor, you will definitely say that it was worth it! Ciao!
