Before you start cooking, keep in mind:

  • 1 tablespoon is approximately equal to 3 teaspoons.
  • For better results and taste, mince meat yourself at home.
  • An average-sized (1 inch thick) patty can be made out of 5-6 ounces of the meat mixture.
  • Chill/refrigerate the patties for at least 30 minutes, so that they hold during cooking.
  • Basting patties with olive oil just before grilling them will make them meatier, juicier and yummier.
  • Flip the patty only after you realize that the patty isn’t sticking to the grill.

Say bye-bye to enveloped/packed/boxed readymade soup mixes and say hello to a yummy, homemade onion soup mix. Minus the artificial preservatives, this homemade recipe tastes great and is easy to make. The recipe works well for vegetarians too, if you decide not to add the beef granules to it.

You will need:
♦ Dried minced onion, 2½ tablespoons
♦ Onion powder, ¼ teaspoon
♦ Beef bouillon granules (low sodium), 2 tablespoons
♦ Seasoned ground black pepper, ⅛ teaspoon
♦ Paprika, ⅛ teaspoon
♦ Parsley flakes, ¼ teaspoon
♦ Salt, ¼ teaspoon

Method:
➾ Add all the ingredients to a large bowl. Stir the mixture thoroughly.
➾ Place the stirred mixture in an airtight jar/container and give it a good shake.
➾ This onion soup mix can be stored and used within a period of 6 months.
➾ Store in a cool and dry place.

Chef’s Tip: Omit the salt in the mix; beef bouillon is already rich in sodium. If someone needs salt in their share, they can add it at the table. Add a pinch of sugar for that hint of sweetness.

Onion Soup Hamburger

You will need:
♦ Sesame seed hamburger buns (split), 4
♦ Egg (slightly beaten), 1
♦ Black beans (can), 1
♦ Garlic clove (minced), 1
♦ Onion (finely chopped ), ½
♦ Lean ground beef (90% lean), 1½ pounds
♦ Dry onion soup mix, 1 ounce
♦ Shredded Colby & Monterey Jack cheese, ½ cup
♦ Garlic powder, 1 tablespoon
♦ Dried parsley, 1 teaspoon
♦ Dried basil, 1 teaspoon
♦ Dried oregano, 1 teaspoon
♦ Worcestershire sauce, 1 teaspoon
♦ Soy sauce, 1 teaspoon
♦ Dried and crushed rosemary, ½ teaspoon
♦ Salt and pepper, added to taste

Method:
➾ Coat the grill with nonstick cooking spray or vegetable oil to avoid sticking of the patties to the grill.
➾ Preheat the grill over medium-high heat.
➾ Meanwhile, add the ground beef, onion, egg, black beans, onion soup mix, garlic, parsley, oregano, basil, rosemary garlic powder, soy sauce, Worcestershire sauce, and cheese to a large bowl and mix thoroughly. Add salt and pepper to taste.
➾ Make 4 fist-sized balls out of this dough and press gently to form patties.
➾ Place the patties over the grill and cook for 3-4 minutes on each side, or until your liking.
➾ Season the patties to make them extra spicy and serve between buns with a generous help of salad dressing on the side.
➾ Tastes best when eaten immediately.

Chef’s Tip: When placed on the grill, do not poke or smash the patties with the spatula. This will cause the meat juices to drip out of the patties onto the grill and flames.

Blue Cheese Stuffed Bacon Hamburger

You will need:
♦ Whole wheat sesame seed hamburger buns (split), 2
♦ Lean ground beef (90%), ¾ pound(s)
♦ Fresh mushrooms (sliced), ½ pound
♦ Dry onion soup mix, 1 ounce
♦ Bacon bits, 3 tablespoons
♦ Blue cheese (crumbled/shredded), 3 tablespoons
♦ Mayonnaise, 2 tablespoons
♦ Softened cream cheese (crumbled/shredded), 4½ teaspoons
♦ Dijon mustard, 1½ teaspoons
♦ Olive oil, 1½ teaspoons
♦ Water, 1½ teaspoons
♦ Salt, ¼ teaspoon or added to taste
♦ Garlic powder, ¼ teaspoon
♦ Ground pepper, ⅛ teaspoon
♦ Romaine lettuce, 2 leaves
♦ Tomato slices, 4

Method:
➾ In a separate bowl, add bacon bits, blue cheese, and softened cream cheese and fold gently.
➾ Make 2 fist-sized balls and press gently to form flattened, round cheese and bacon patties, preferably smaller in diameter than the beef patties.
➾ Coat the grill with nonstick cooking spray or vegetable oil to avoid sticking of the patties to the grill.
➾ Preheat the grill over medium-high heat.
➾ Place the ground beef in a large bowl.
➾ Add dry onion soup mix, garlic powder, salt, ground pepper to the beef and fold gently.
➾ Prepare 4 fist-sized balls and press gently to form flattened, round beef patties.
➾ Take one of the beef patties, place a cheese patty over it. Place another beef patty over the cheese patty and pinch the sides to seal them. Repeat for the remaining two beef patties and cheese patty. Your stuffed patties are ready.
➾ To cook the stuffed patties, place them over the preheated grill and cook until your liking. For a medium-rare patty (crisp on the outside, tender and juicy on the inside), cook for about 2-3 minutes on each side.
➾ To cook the mushrooms, add oil in a shallow frying pan and heat over a medium flame. Add mushrooms to the pan and sauté until golden-brown in color. Add water and mustard and stir gently for 1-2 minutes.
➾ Serve with slightly toasted buns, lettuce, tomato slices, mayonnaise and sautéed mushrooms and grilled onions.

Chef’s Tip: Fry the bacon bits slightly in vegetable oil to add that extra bit of grease, crunch and taste to your burger. If looking for an all-out amazing flavor-packed hamburger, deep-fry the burger patties as well in vegetable oil.

Canadian Burger with Beer-braised Onions

You will need:
♦ Freshly ground beef, 1½ pounds
♦ Dry onion soup mix, 1 ounce
♦ Garlic cloves (minced), 2
♦ Large onion (thinly sliced), 1
♦ Cheddar cheese (grated/shredded), 2 cups
♦ Beer, ¾ cup
♦ Red pepper (finely diced), ¼ cup
♦ Dijon mustard, 2 tablespoons
♦ Sugar, 1 tablespoon
♦ Butter, 1 tablespoon
♦ Salt, to taste
♦ Freshly ground pepper, to taste

Method:
To Beer-braise the Onions:
➾ Heat a frying pan or skillet over a medium-high flame, add the butter and let it melt.
➾ Add onions to the melted butter, toss gently, for 5-6 minutes, or until they tenderize.
➾ While still stirring the onions, slowly pour beer into the skillet. Cook until onions get a glossy, caramelized, slightly burned appearance.

Traditional BLT with Tarragon Russian Dressing

You will need:
♦ Whole wheat sesame seed hamburger buns (split), 6
♦ Iceberg lettuce leaves, 6
♦ Tomato slices, 6
♦ Red onion slices, 6
♦ Freshly ground beef chuck, 1⅓ pounds
♦ Freshly ground beef sirloin, 1⅓ pounds
♦ Bacon (shredded into thick slices), 12 ounces
♦ Sharp Cheddar cheese (sliced), 6 (3 ounces)
♦ Dry onion soup mix, 1 ounce
♦ Mayonnaise, ½ cup
♦ Ketchup, ½ cup
♦ Unsalted butter, 2 tablespoons
♦ Red wine vinegar, 1 tablespoon
♦ Onion (grated), 1 tablespoon
♦ Parsley (chopped), 1 tablespoon
♦ Tarragon (chopped), 1 tablespoon
♦ Worcestershire sauce, 1 teaspoon
♦ Kosher salt, 1 teaspoon
♦ Freshly ground pepper, ½ teaspoon
♦ Salt, to taste

Method:
For the Tarragon Russian Dressing:
➾ In a large bowl, add the mayonnaise, ketchup, red wine vinegar, Worcestershire sauce, grated onion, chopped parsley, and chopped tarragon.
➾ Cover the bowl with a sheet of cling film and refrigerate for 1-2 hours.

For the Bacon:
➾ In a medium-sized frying pan, heat enough vegetable oil to fry the bacon.
➾ Once the oil is heated to a medium-high temperature, add the bacon and allow to cook for 5-6 minutes or until crisp and golden-brown in color.
➾ Cut the fried bacon into large pieces and set aside.

For the Burger Patties:
➾ Coat the grill with nonstick cooking spray or vegetable oil to avoid sticking of the patties to the grill.
➾ Preheat the grill over medium-high heat.
➾ Fill a large bowl with chilled ice water.
➾ In a separate bowl, mix together ground chuck beef and ground sirloin beef.
➾ Season the beef mixture with dry onion soup mix, salt, and freshly ground pepper.
➾ Prepare 6 fist-sized balls and press gently to form flattened, round beef disks (about 1 inch thick). Your burger patties are ready.
➾ Place the patties in chilled water for 30 seconds at least. Once you take them out, place them over the preheated grill and apply melted butter over them with an oil-brush. Butter and grill each side of the patty for about 5-6 minutes or until done to your liking.
➾ Top the burgers with generous helpings of Cheddar cheese and allow it to melt.
➾ Spread the refrigerated Tarragon Russian dressing on the split hamburger buns. Place red onion and tomato slices, lettuce leaves, and bacon strips between the buns.
➾ Toast the hamburger slightly over the grill and serve hot.

Chef’s Tip: When making the patty disks, gently dimple its center by creating a cavity/pit with your knuckles. This will prevent the patty from shrinking and pulling in at the center. The result will be an evenly-cooked, round, well-shaped, not-broken burger patty.

Mediterranean Beef Burgers with Tomato Salsa

You will need:
♦ Whole wheat sesame seed hamburger buns (split), 4
♦ Fresh lean beef (minced), 1½ pounds
♦ Sun-dried tomatoes (finely chopped), 1½ ounces
♦ Garlic cloves (crushed), 2
♦ Eggs, 1
♦ Breadcrumbs (3 bread slices), 1 ounce
♦ Dry onion soup mix, 1 ounce
♦ Onion (finely chopped), 1
♦ Red tomatoes (finely diced), 2
♦ Red pepper (finely diced), 1
♦ Fresh green chillies (finely chopped), 1
♦ Fresh red chillies (finely chopped), 1
♦ Red onions (finely diced), 1
♦ Beetroot (sliced), 8 slices
♦ Cheese slices (optional), 4
♦ Fresh coriander (finely chopped), 2 tablespoons
♦ Fresh chives (snipped), 1 tablespoon
♦ Balsamic vinegar, 2 teaspoons
♦ Salt, to taste
♦ Black pepper (freshly ground), to taste

Method:
For the Tomato and Coriander Salsa:
➾ In a large bowl, add all the diced vegetables (tomatoes, red pepper, and red onions), beetroot, green and red chillies, coriander, and chives. Mix well.
➾ Season the mixture generously with balsamic vinegar, salt, and pepper.
➾ You could add a dash of lime and sugar for a bit of mischievous sweet-sour taste. Mix well.

For the Burger Patties:
➾ Coat the grill with nonstick cooking spray or vegetable oil to avoid sticking of the patties to the grill.
➾ Preheat the grill over medium-high heat.
➾ Sauté the finely chopped onions in a small frying pan until golden-brown.
➾ Whisk the egg lightly in a small bowl.
➾ In a separate, larger bowl, combine minced beef, breadcrumbs, crushed garlic, sun-dried tomatoes, sautéed onions, and whisked egg.
➾ Season generously with salt, pepper, and dry onion soup mix. Fold this mixture gently with your hands.
➾ Prepare 4 fist-sized balls and press gently to form flattened, round beef patties (about 1 inch thick).
➾ Baste the patties with olive or vegetable oil for extra crispness and place over preheated grill.
➾ Grill for 4-5 minutes on each side, or until liking. If you want to add cheese to your hamburger, now would be the time. Place the cheese slices over the burger patties while they are still on the grill and let it stand for about 30-60 seconds.
➾ Serve the burgers with butter-toasted buns and red-hot tomato and coriander salsa dressing.

Chef’s Tip: To enjoy your homemade burger to the fullest, keep in mind that fresh herbs and ingredients make the difference. Try something different. Omit the top bun and serve open burger, smothered with healthy, yummy vegetable or fruit toppings.

Beef and Cheese Mini Hamburgers

You will need:
♦ Dinner rolls (slit), 8
♦ Cheese slices, 4
♦ Freshly minced beef, 1 pound
♦ Eggs (slightly beaten), 1
♦ Garlic cloves (crushed),1
♦ Brown onion (grated), 1
♦ Gherkins (finely chopped), 15 ounces
♦ Ketchup/tomato sauce, 1 tablespoon
♦ Salt, to taste
♦ Pepper, to taste
♦ American-style mustard and ketchup to serve

Method:
For the Burger Patties:
➾ Coat the grill with nonstick cooking spray or vegetable oil to avoid sticking of the patties to the grill.
➾ Preheat the grill over medium-high heat.
➾ In a large bowl, add minced beef, beaten egg, grated onion, crushed garlic, chopped gherkins, and 1 tbsp tomato sauce. Mix until uniform consistency is achieved.
➾ Take about 2 tablespoons of this mixture, roll into a small sphere and flatten it to make a disk about 1 inch thick. This is your burger patty. Make 8 such patties out of the meat mix.
➾ Refrigerate the patties for about 30 minutes before grilling/cooking. This holds the meat together and prevents them from falling apart when being cooked.
➾ Once ready to cook, place the refrigerated the patties on the preheated grill. Cook each side of the patty for about 3-4 minutes or until they are cooked through.
➾ Top the burger with grated cheese or cheese slices and cook until the cheese has melted.
➾ Meanwhile, butter the slit dinner rolls and toast them slightly on the grill.
➾ Serve cheese-topped burger between toasted buns and American-style mustard or ketchup.

Chef’s Tip: These yummy mini burgers will be even more fun if served with a “surprise-in-the-center”. You could try adding a spoon of grated cheese, a grape, tomatoes or onions, nuts or even chocolate. The possibilities are endless and you can be as creative as you wish. Add these surprises just before you roll balls for the patties.
