Taco Pasta

Cheese-stuffed taco pasta is an easy, satisfying, one-pot dinner that’s ideal for busy weeknights.

Start by browning the ground beef in a large pot over medium heat. Halfway through, add onion and cook until soft; drain any excess grease before stirring in Rotel tomatoes, fire-roasted diced green chiles, taco seasoning and beef broth. Simmer for approximately 10-15 minutes, until simmering has subsided, before adding pasta – cover and continue cooking until al dente is achieved.

Serve hot and top it with all your favorite Tex-Mex toppings like scallions, sour cream, lime juice, greek yogurt, extra shredded cheese and salsa for an authentic Mexican flair! This dish makes great leftovers and freezer-friendly options; simply add a splash of water before reheating! For vegan options use plant-based ground beef, vegetable broth and vegan cheddar cheese instead!

Overcooking chicken breast can quickly turn it dry, so use a meat thermometer and cook until its center reaches 165 degrees. After being finished cooking, allow it to rest before cutting into it; the meat will continue releasing juices and becoming tenderer as time goes on, producing juicy and flavorful results! You won’t go back to baked chicken breast again!
