What is a Suitable Replacement for Eggs in Brownies?

Before you find a suitable egg substitute, you should understand the purpose of adding eggs to make brownies. Eggs are primarily used as binding agents that combine all the ingredients in the brownies together. The moist texture that defines a brownie is given to it with the use of eggs. Eggs work as leavening agents, and finally, they even help give brownies their volume and shape, since they bind all the ingredients together.

Silken Tofu

Amount:
1 Egg = ¼ cup Blended Silken Tofu
How to Use:
Shred ¼ cup of tofu and toss it in the blender. Blend until it attains a completely smooth texture.

Unsweetened Applesauce + Baking Powder

Amount:
1 Egg = ¼ cup Applesauce, 1 tsp. Baking Powder
How to Use:
The chocolate in the brownies overpowers the flavor of applesauce so it can be safely used, and is in fact, one of the best egg substitutes for brownies. Those who have tested this substitute claim that the brownies taste just the same.

Flaxseed

Amount:
1 Egg = 1 tbsp. ground Flaxseed + 3 tbsp. Water
How to Use:
Grind the flaxseed in a coffee grinder, and mix with water. Allow it to rest till it becomes gelatinous, then use. Flaxseed are extremely healthy, and will provide some nutrition apart from being a suitable egg substitute.

Banana

Amount:
1 Egg = ½ puréed Banana
How to Use:

Many people use other different types of substitutes for eggs, such as arrowroot, cornstarch, gelatin, and even oats.
