Easy and Quick Recipes to Make Tasty Stuffed Cabbage Rolls

The idea of eating cabbage is not really appealing for some people, however, there are ways to ensure that one does not miss out on the nutrition this vegetable provides. One such way is preparing delicious cabbage rolls. Take a look at this simple recipe for the same.

A cabbage roll is a dish made by stuffing a variety of fillings like herbs, meat, and vegetables in cooked, steamed, or raw cabbage leaves. These rolls with their stuffing can be steamed, boiled, baked, or shallow fried. Traditional fillings include rice and a small portion of meat, but the fillings can completely depend upon an individual’s choice. It is often accompanied with a tomato-based sauce, plain sour cream, some yogurt, or lemon and olive oil vinaigrette.

Cabbage Roll Recipe

Ingredients:

  • Ground beef, 1 lb
  • Ground pork, 1 lb
  • Steamed white rice, 1½ cups
  • Egg, 1
  • Tomato paste, 2 tbsp.
  • Onion (chopped), 1
  • Garlic (minced), 2 cloves
  • Olive oil, 1¼ cups
  • Parsley (chopped), 2 tbsp.
  • Salt and pepper, to taste
  • Green cabbage heads, 2

Heat one cup of the olive oil in a skillet. Add the onion and garlic to it, and sauté them until they turn soft. Add in the tomato paste and parsley, stir for a minute, and take the skillet off the heat. In a large bowl, mix the ground beef and pork along with the egg, rice, and sautéed onion and garlic together. Season the mixture with the salt and pepper, and toss it to mix well.

Boil water with some salt in a large pot. Peel off the first couple of cabbage leaves from the head, cut out the cores, and separate the whole leaves carefully. Blanch only the whole, large cabbage leaves, and when a slight change in color occurs, drain the water, and rinse the leaves under cold running water immediately.

Lay the leaves on a flat board, and depending upon the size of the roll you want, cut them from the center. Spoon the meat and rice filling accordingly in the center of the leaves and roll by folding the sides. If you need, secure the rolls with the help of a sewing thread. Take the left over leaves (reserving some) and arrange them on a baking dish. Place the rolls seam side down, side by side in the baking dish. Cover the rolls with the reserved cabbage leaves, and bake in a 350 °F preheated oven for an hour.

Sweet and Sour Tomato Sauce for the Rolls

Ingredients:

  • Red tomatoes, 1 cup
  • Garlic cloves (crushed), 2
  • Olive oil, 2 tbsp.
  • Wine vinegar, 2 tbsp.
  • Sugar, ½ tbsp.

Heat the oil in a saucepan, add in the garlic, and sauté until it turns soft. Add the tomatoes to the pan, stir, and cook until they soften. Add in the wine vinegar and sugar, stir, and simmer until the sauce thickens to a desired consistency. Remove the pan from the heat and season it with salt and pepper.

While making the cabbage rolls, make sure you use fresh green leaves that have no discoloration or spots. Try making these rolls with plenty of other variations and methods such as steaming, shallow frying, or boiling and enjoy them with the tangy, sweet and sour tomato sauce.
