Moist Bread Recipe
Bread is said to be the best way of consuming zucchini. It not only provides people with nutrition value, but is also very delicious. So, here are some easy recipes that you can try at home.
  • Zucchini (grated), 2 cups
  • All-purpose Flour, 3 cups
  • Baking Soda, 1 tsp.
  • Vanilla Extract, 3 tsp.
  • Ground Cinnamon, 3 tsp.
  • Eggs, 3
  • Baking Powder, 1 tsp.
  • White Sugar, 2¼ cups
  • Salt, 1 tsp.
  • Vegetable Oil, 8 oz.
  • Walnuts, (chopped) 1 cup
In a mixing bowl, mix flour, cinnamon, baking soda, and baking powder by sifting through a sieve. Beat eggs in another large mixing bowl. Add sugar and vanilla to it. Mix till all the ingredients get blended properly. Add the dry ingredients that were mixed earlier into the large mixing bowl and stir well.
Fold in the zucchini and nuts into this mixture and stir once. Grease two 8x4 inch baking pans and lightly dust them with flour. Pour the batter into the pans and bake in a 165 °F preheated oven for 40 - 60 minutes. When this is done, insert a toothpick into the bread and if it comes out clean, allow it to remain in the pan for 20 minutes. After twenty minutes, transfer into the wire rack and let it cool completely.
Carrot-Zucchini Combination Bread
  • Zucchini, (shredded) 8 oz.
  • Carrot, (shredded) 8 oz.
  • All-purpose Flour, 3½ cups
  • Brown Sugar, 4 oz.
  • Baking Powder, 3 tsp.
  • Butter, (melted) 2 tbsp.
  • Ground Cinnamon, 1 tsp.
  • Eggs, (lightly beaten) 2
  • Salt, ½ tsp.
  • Baking Soda, 1 tsp.
  • Buttermilk, 12 oz.
  • Lemon, (zest)
  • Orange, (zest)
  • Walnuts, (chopped) 4 oz.
In a large mixing bowl, beat eggs, melted butter and buttermilk together. Add brown sugar to this mixture and whisk the ingredients together. Stir carrots, zucchini, lemon, and orange zests into this and set aside. In another bowl, sift baking powder, flour, cinnamon, and baking soda together. Combine these dry ingredients in the large mixing bowl and beat till all the ingredients are fully combined. Sprinkle the chopped walnuts into the batter and stir once.
Take 9 x 5 inch loaf pans and grease them with oil. Fill the pans with the batter and place on a 347 °F preheated oven. Bake for 60 - 75 minutes and then take it out of the oven after conducting the toothpick test. Allow it to cool on the pan for at least 10 to 15 minutes and then place it on the wire rack to cool fully.
Zucchini-Chocolate Combination Bread
  • All-purpose Flour, 8 oz.
  • Zucchini, (shredded) 12 oz.
  • Baking Powder, ¼ tsp.
  • Whole Eggs, 2
  • Cinnamon, ½ tsp.
  • Granulated Sugar, 4 oz.
  • Unsweetened Cocoa Powder, 4 oz.
  • Canola Oil, 4 oz.
  • Vanilla Extract, 1 tsp.
  • Ground Allspice, ¼ tsp.
  • Baking Soda, 1 tsp.
  • Light Brown Sugar, 4 oz.
  • Semi-sweet Chocolate Chips, ¾ cups
  • Salt, ¼ tsp.
Combine all the dry ingredients including flour, baking powder, cinnamon, allspice, cocoa powder, and salt together in a bowl and set aside. In another bowl take oil, vanilla extract, sugar, and eggs and blend them together with the help of an electric mixer for at least 2 minutes. When this is done, add zucchini and this should be followed by the dry ingredients that are already mixed. When all the ingredients are fully blended, add the chocolate chips into it. Prepare a 9 x 5 x 3" pan by greasing it with a nonstick vegetable spray. Pour the batter into this pan and bake in a 350 °F preheated oven for 55 - 60 minutes. Allow it to cool completely before serving.
Zucchini-Pineapple Combination Bread
  • Zucchini (grated), 2 cups
  • Applesauce or Vegetable Oil, 8 oz.
  • Crushed Pineapple (drained), 4 oz.
  • Baking Powder, 1 tsp.
  • Vanilla Extract, 1 ½ tsp.
  • Sugar, 2 cups
  • Baking Soda, 1 tsp.
  • Raisins, 4 oz.
  • Flour, 3 cups
  • Eggs, 3
  • Walnuts, (chopped) 8 oz.
Break the eggs in a bowl and add vanilla extract, oil, and sugar to it. Beat till they are fully blended and then add zucchini. This should be followed by the addition of dry ingredients including baking powder, flour, and baking soda. Fold in nuts, pineapple and raisins into the batter and stir gently. Grease and flour a loaf pan and fill it with the batter. Bake in a 350 °F preheated oven for an hour or so. Take it out of the oven and conduct the toothpick test. Allow it to cool completely by placing it on the wire rack.
