If you walk through any departmental or health store, you will come across wheat germ, which is considered to be one of the most nutritious grains. It is extracted from the kernel of wheat and contains more than 23 nutrients. It is rich in proteins, minerals and other nutrients, required for the proper functioning of the body. It has several health benefits as it is rich in iron, potassium, magnesium, zinc, calcium, and other nutrients like riboflavin, vitamins A, B, and B3. If you take a look at its nutritional facts, you will discover that it is also an excellent source of vitamin E, folate and fiber.
There are many recipes that can be prepared by using these grains. Kids especially, like granola bars, which can be made by using wheat germ. To a certain extent, wheat bran can be used as its substitute. Adding these grains to the recipes not only makes the dish nutritious, but it also enhances the taste by giving it a unique flavor.
Wheat Germ Smoothie
  • Wheat Germ, ¼ cup
  • Low-fat Vanilla Yogurt, 1 cup
  • Crushed Ice, 1 cup
  • Banana, 1
  • Fresh Orange Juice, ¼ cup
  • Peach, (sliced) 1 cup
Cut the banana into medium-sized chunks and put them in a blender. Add the wheat germ, yogurt, orange juice, and peach slices to the blender. Put the crushed ice on top and blend all the ingredients together, till they become smooth. Transfer the contents to a tall glass and garnish it with wheat germ, banana or peach slices. Serve it chilled.
Wheat Germ Vegetarian Torte
  • Wheat Germ, ¾ cup
  • Medium-sized Onion, (sliced) 1
  • Medium-sized Tomato, (thinly sliced) 1
  • Marjoram, (crushed) 1 tsp.
  • Butter, (melted) 8 tbsp.
  • Medium-sized Zucchini, (sliced) 2
  • Parmesan Cheese, (grated) ½ cup
  • Saltine Cracker Crumbs, 1 cup
  • Milk, ⅓ cup
  • Eggs, 2
  • Pepper, ¼ tsp.
  • Monterey Jack Cheese, (grated) 1 cup
  • Tarragon, (crushed) ¼ tsp.
  • Salt to taste
In a medium-sized bowl, combine the wheat germ, 6 tbsp. melted butter, and cracker crumbs. Mix well. Transfer the contents into a greased pie pan and spread it evenly. Bake this in a preheated oven at 400° F for about 8 minutes till it is light brown. Beat the eggs and milk together in a separate bowl and keep it aside. Cook the onions and zucchini in butter, till they become crisp, using a medium-sized saucepan. Add the seasonings and stir them till they combine properly. Transfer half of the vegetables to the pie pan and sprinkle 3 tbsp. of wheat germ on top. Spread the grated cheese and the remaining vegetable mixture on top of the crust. Pour the egg and milk mixture on top and again add 3 tbsp. of wheat germ. Cover the crust with tomato slices, remaining cheese, and wheat germ. Bake it in the oven at 325° F for about 45 minutes.
Pineapple Bundt Cake with Wheat Germ
  • Unbleached All-purpose Flour, 1 cup
  • Whole Wheat Flour, 1½ cups
  • Wheat Germ, ½ cup
  • Pineapple, (canned) 1 cup
  • Pineapple Juice, ½ cup
  • Baking Soda, 1 tbsp.
  • Brown Sugar, 1 cup
  • Liquid Egg Substitute, 2 tbsp.
  • Cream of Tartar, 1½ tsp.
  • Applesauce, 1 cup
  • Silken Tofu, 10½ oz.
  • Corn Syrup, ½ cup
  • Water, ½ cup
  • Sea Salt, ¼ tsp.
  • Almonds, 1½ cups
  • Lemon Juice, 2 tbsp.
  • Almond Extract, 1 tsp.
In a medium-sized bowl, sift the all-purpose flour, baking soda, salt, and cream of tartar. Add the whole wheat flour and wheat germ, and mix them properly. In a separate bowl, whisk the egg substitute and water till it has a foamy appearance. In a large bowl mix the applesauce, pineapple juice concentrate, corn syrup, almond extract, brown sugar, and egg substitute, and stir properly. In a food processor, blend the tofu, while adding the lemon juice. Transfer the rest of the dry ingredients into the applesauce mixture and the tofu mixture. Mix the crushed pineapple slices and almonds properly. Pour this cake mixture into a bundt pan, greased and sprinkled with flour and bake it in a preheated oven at 350º F for about 45 minutes, till the cake becomes light brown.
