Traditional Method

  • French Bread, 1 loaf (which has been cut into small cubes to fill about 10 to 12 cups)
  • Walnuts, 1 cup
  • Onions, 2 cups
  • Celery, 2 cups
  • Butter, 6 tbsp.
  • Green Apple, 1 (peeled, cored, and chopped)
  • Raisins, ¾ cup
  • Green Martini Olives, 10
  • Giblet Stock, 3 cups
  • Fresh Parsley, ¼ cup (chopped)
  • Sage, 1 tsp. (ground)
  • Salt, to taste
  • Pepper, to taste (ground)
  • To make the stock, take the heart, gizzard (giblets), and neck and put them in a pan filled with water and salt. Let this simmer for 50 to 60 minutes in an uncovered pan. Once the stock is cooked, strain it into a container and let it rest for some time.
  • Take the walnuts and toast them in a frying pan on high heat for a few minutes. Stir them till they get browned and be careful that they don't get burned. Allow them to cool and then crush them.
  • Take a pan and put it on medium heat. Take 3 tbsp. butter and melt it in a pan. To this melted butter add the bread cubes and stir, so that the bread gets completely covered with butter. Toast the bread cubes and let them become brown.
  • Take another pan and sauté the chopped onions and celery in 3 tbsp. butter, for 10 minutes. Add the bread and walnuts along with green apple, currants, olives, parsley, and raisins. Add 1 cup giblet stock to this mixture, as this is needed to make the stuffing moist. Add the sage, poultry seasoning, salt, and pepper.
  • Now turn the heat to a low setting, cover the pan and let it cook for 1 hour, till the apples get completely cooked. Keep checking every 10 minutes and add more stock for moistness, and also to avoid sticking or burning.
