Osteoarthritis can also be treated with the help of tomatoes, apart from other diseases, like night blindness and multiple sclerosis. It also saves us from muscular degeneration, as it contains beta-carotene.
Since it contains vitamin C, it helps as an antioxidant, is anti-inflammatory, and can also protect us from asthma. Scurvy is another disease that can be dealt with the help of tomatoes. Here are a few recipes that can be really delightful for your taste buds.
Green Tomato Pie
  • ¾ cup granulated sugar
  • pastry to 9-inch 2-crust pie
  • 1 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • ½ teaspoon salt
  • 6 to 8 medium green tomatoes
  • 2 tablespoons cornstarch
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon butter
The green tomatoes should be washed properly, peeled, and sliced. Take a saucepan, so that you can combine them with lemon juice, lemon peel, salt, and cinnamon. Now, let the tomato mixture cook over low heat, and keep stirring the mixture frequently. Then, combine sugar and cornstarch, and stir it into the tomato mixture.
Keep cooking the mixture until it is clear. Also, keep stirring it continuously. Then, add a little butter, remove the mixture from the heat, and let it stand until slightly cooled. Line a pie plate with pastry, and then pour in the tomato mixture. Before serving, cover with top pastry, seal edges, crimp, and cut a few small slits in the crust, so that the steam can escape. Now, bake the whole thing at 435° for about 35 to 45 minutes, or until you can see it nicely brown. You can serve this either warm or cooled.
Tomato Salad
  • ⅓ cup of chopped basil
  • 1 large red tomato, sliced
  • 1 sliced cucumber
  • 1 large sliced yellow tomato
  • 8 ounces of mozzarella cheese
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
This is really simple to prepare. The only thing that you need to do is layer all the vegetables and cheese, and then mix oil, lemon juice, salt, and pepper. Drizzle it over the salad, and top it with basil. Chill it if you want to.
Tomato Green Beans
  • ½ cup chopped green onions
  • 1 lb. green beans, trimmed
  • ½ cup Italian salad dressing
  • 1 pt. cherry tomatoes
First, you need to cut the green beans in half, which are to be cooked in boiling salted water until they are tender, which would take about 6 - 8 minutes. Drain the beans well, and again put them in the pan. Now, add the remaining ingredients, and toss them over low heat for approximately 1 minute. Serve immediately, or you can also chill it and serve over lettuce.
