Tilapia Fish Tacos

Ingredients
  • 8 corn tortillas or flour tortillas (small size)
  • 5 tilapia fillets
  • 1 lime juice
  • 2 tablespoons southwest seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon cumin
  • Salt to taste
  • Cooking spray
Process

Take a nonstick pan and heat oil in it. Once heated, add tilapia to it, season it with salt, cumin, lime juice, and southwest seasoning. Cook from both sides until golden, set aside. Take a small skillet, spray it with cooking spray, and add tortilla to it. Cook both sides until brown. Now fill tortilla with one-eighth portion of the fish, top it with sour cream, fresh salsa, shredded cheese, and a lime slice. Repeat with the rest of the tortillas. Serve immediately.

Tilapia with Anaheim Chili Pepper and Olives

Ingredients
  • 4 plum tomatoes, chopped
  • 3 (4 ounces) fillets tilapia fillets
  • 3 cloves garlic, minced
  • 1 large stemmed, seeded, and chopped Anaheim chili pepper
  • 1 lime, juiced
  • 1 (4 ounces) can sliced black olives
  • 1 cup chicken stock
  • ½ cup chopped fresh cilantro
  • ½ cup chopped yellow onion
  • ¼ cup dry white wine
  • ¼ cup extra-virgin olive oil, divided
  • 1 tablespoon butter
  • 1 tablespoon Creole seasoning
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper

Preheat the oven to 350ºF and anoint a 9" X 13" baking dish with only half the olive oil. Now apply a little oil on both sides of the fillets, place them on the baking dish, and season them with black pepper, Creole seasoning, cilantro, and 1 teaspoon kosher salt. Drizzle the remaining oil along with lime juice on the fish and set aside. Take a saucepan and melt butter over medium heat. Add onion, Anaheim pepper, and garlic. Cook for about 5 minutes until the onion softens and turns brownish. After the required time, stir in olives, chicken stock, cumin, oregano, cayenne pepper, the remaining kosher salt, red pepper flakes, Worcestershire sauce, and ground black pepper. As the mixture begins to boil, reduce the heat and simmer for about 20 minutes. After 20 minutes, bake the fish in preheated oven for about 20 minutes until the flesh turns white and can be easily flaked. Spread the sauce over tilapia fillets and serve.

Tilapia with Pineapple

Ingredients
  • 4 (6 ounces) tilapia fillets
  • 4 lime wedges
  • 1 small seeded and chopped jalapeño pepper
  • 1½ cups fresh pineapple chunks
  • ⅓ cup chopped onion
  • ⅓ cup chopped tomato
  • 2 tablespoons rice vinegar
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon ground red pepper
  • ¼ teaspoon kosher salt
Process

Take a small bowl and combine salt, pepper, and Cajun seasoning in it. Place the tilapia fillets in a shallow dish and rub the Cajun mixture on both sides of the pieces. Put the fish in a steam bag with a zip and cook for about 9 minutes until the pieces turn white and can be easily flaked with a fork. Set aside. Take a large bowl and combine pineapple, onion, rice vinegar, tomatoes, cilantro, and jalapeño pepper in it gently. Serve fish with this pineapple mixture. Garnish with lime wedges before serving.
