Taco soup can be a mouth-watering as well as filling meal, when served along with warm tortillas and salad. It is a universal favorite due to its taste as well as great nutritional value. Although a hot, steaming soup is mostly preferred on cool days, this wonderful soup is welcome in any weather.
Taco is one of the popular, traditional Mexican recipes, which consists of wheat or corn tortilla folded around a filling of variety of vegetables, cheese, any meat, or fish. Taco soup is prepared from similar ingredients such as tomatoes, beans, corn, ground beef, and taco seasoning.
It is generally topped with sour cream, cheese, nacho chips, and avocados. This low-calorie, flavorful, and filling soup is a weight watcher's favorite. You can make many nutritious variations of taco soup by adding different ingredients of your choice.

Taco soup

  • 1 lb ground beef
  • 2 cans Mexican style tomatoes
  • 2 cans whole kernel corn (drained)
  • 2 cans Ranch style beans
  • 1 package taco seasoning
  • 1 package Ranch mix
First cook the ground beef and drain it. Then add all the remaining ingredients to it, and mix well. Allow this mixture to simmer for about 20 minutes until it turns thick. You can top this soup with tortilla chips, cheese, or sour cream.

Taco Beef Soup

  • ½ lb hamburger
  • 1 (16 oz.) can kidney beans
  • 1 (8 oz.) can tomato sauce
  • 1 (16 oz.) can tomatoes
  • 1½ cups water
  • ¼ cup onion
  • 2 tbsp. taco seasoning
  • Sour cream
  • Shredded cheese
  • Corn chips
In a saucepan, brown the onion and hamburger. Then add in the tomatoes, kidney beans, tomato sauce, and taco seasoning. Pour water, and let the mixture simmer until it thickens. Arrange the corn chips around the bowl and pour the soup over these chips. Top it with shredded cheese.

Vegetarian Taco Soup

  • 1 (15 oz.) can pinto beans
  • 1 (15 oz.) can black beans
  • 1 (15 oz.) can corn
  • 1 (15 oz.) can navy beans
  • 1 (15 oz.) can green beans
  • 1 (15 oz.) can black-eyed peas or purple hull peas
  • 1 (1 oz.) package ranch dressing mix
  • 1 (1¼ oz.) package taco seasoning mix
  • 1 (10 oz.) can Rotel tomatoes
  • 1 (14 oz.) can tomato sauce
  • 1 small onion (chopped)
  • 2 cups water
Suggested condiments
  • Grated cheese
  • Sour cream
  • Sliced jalapenos
  • Picante sauce or Tabasco sauce
  • Green onion
  • Crushed tortilla chips or Fritos corn chips
In a big colander, drain and rinse the black beans, pinto beans, navy beans, green beans, peas, and corn. Place these ingredients in a Crock Pot. Then add the remaining ingredients to it and mix them well. Simmer this mixture for about 30 minutes to an hour.
You can add the condiments of your choice to the soup. Top the soup with grated cheese and crushed tortilla chips.
