One of the best puddings, I have had in the recent times is the stovetop brown rice pudding. I guess the taste of the pudding is enhanced, as it is completely made on stovetop over low heat. Now I really wonder, would I want to make any other pudding anytime soon, of course other than this rice pudding.

The rice pudding is actually a German export to the world. It is known as Milchreis in German. As a matter of fact, it is served as sweet main dish. It may be topped with a fruit or fruit jam or simply with sugar and cinnamon. Like I have previously mentioned, cooking the pudding on stovetop directly adds to the taste of the pudding. Healthy Recipe

You will often hear people saying, that you cannot make rice pudding using brown rice. However, with the right measurements, it is indeed possible. Remember this recipe makes use of skim milk, therefore, it is all the more healthy.

Ingredients
  • 1 cup brown rice
  • 3 ½ to 4 cups skimmed milk
  • 4 ½ tbsp maple syrup
  • ½ cup raisins
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • a pinch of nutmeg powder
Preparation
  • Place rinsed and strained rice in a saucepan along with 3 cups of milk.
  • Let the mixture come to boil and then reduce the heat to low.
  • Cover the saucepan and let the rice simmer till it is well cooked.
  • Do not forget to stir in between. If you feel that the rice may stick, you may add quarter cup of milk.
  • After the rice is almost cooked after about an hour and 15 minutes, add maple syrup, cinnamon, vanilla extract, nutmeg to the rice mixture and let it cook again. You may add some more milk at his stage.
  • When the rice is completely cooked, add raisins and let the rice cook again for 15 to 20 minutes.
  • Serve cold or at room temperature topped with cinnamon and nutmeg.
Vegan Recipe

Many people choose to use it as their breakfast recipe as well. It is not only tasty but also sumptuous and keeps the person going even for a day.

Ingredients
  • ½ cup brown rice
  • 1 ½ cup vanilla soymilk
  • 1 tbsp cornstarch
  • 3 tbsp honey
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • ¼ cup raisins
  • dash of nutmeg
Preparation
  • In a pan cook rice with 2 cups of water, till it is soft and sticky.
  • Mix milk and cornstarch in a mixing bowl and pour it into a saucepan to cook over low heat.
  • Add cooked rice, honey, cinnamon to the cornstarch mixture and let it cook for 7 to 10 minutes.
  • Then add raisins, vanilla extract to the mixture and serve it hot in winter and cold in summer.
Easy Recipe

If you do not have the time necessary, yet would want to treat yourself with a pudding, this is the apt recipe for you. In this recipe, you can also left over rice.

Ingredients
  • 1 cup brown rice
  • 1 cup milk
  • 4 tbsp honey or maple syrup
  • 3 tbsp raisins
  • ½ tsp cinnamon
  • 4 to 5 cups of water
Preparation
  • In a pot add washed and soaked rice with 4 cups of water.
  • Cover the pot and let the rice cook for an hour to an hour and half.
  • When the rice is cooking, make sure that it does not stick to the bottom of the pan. Add additional water if required.
  • Once the rice is cooked, add the remaining ingredients to the rice and let the pudding cook for another half an hour.
  • Serve topped with fruits or cinnamon.
When you want to make pudding on the stovetop, it is best to soak brown rice in water for a couple of hours. Soaking rice ensures that the rice is becomes a little creamy. While some people prefer to cook rice in milk, there are others who prefer the rice before milk is added to it. You can choose anyone of the method, as pudding turns out good either way. The advantage with the rice cooker is that you do not have to be bothered about rice sticking to the pot.
