As the name rightly suggests, soy sauce chicken is nothing other than chicken cooked in soy sauce. This is an authentic northern Chinese delicacy that is now served in Chinese restaurants across the globe. The soft and succulent chicken is relished by almost all, who love Chinese cuisine, especially the chicken dishes. You may prepare this dish at home, provided you know the right methods.
How to Make Soy Sauce Chicken
Recipe - I
  • Soy sauce - 1 cup
  • Chicken breasts - 3
  • Sherry - 1 tablespoon
  • Brown sugar - 1 cup
  • Fresh ginger - 1 inch piece
  • Star anise - 2
  • Water - 1 cup
Take a pan and boil water in it, along with other ingredients, except chicken. Allow the mixture to boil once again, before covering the pan with a tight lid. Cook the chicken over medium heat for around five minutes. After five minutes, open the lid and turn over the chicken. Once again cover the pan and cook for another five minutes. After that, turn off the heat and allow the pan to sit covered for at least an hour. You can open the lid after an hour. Slice the chicken and serve with sauce and garnishing. You can use sliced green onions for garnishing.

  • Whole chicken - 1
  • Soy sauce - ½ cup
  • Garlic cloves - 3
  • Star anise - 2
  • Brown sugar - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Chinese rice wine - ¼ cup
  • Fresh ginger - 1 inch piece
  • Water - ½ cup
  • Five-spice powder - ½ teaspoon
  • Chopped bird's-eye chili - 1 teaspoon
  • Green onion - 1 stalk
  • Sesame seeds - 1 teaspoon
How to Prepare
Clean the chicken and cut into parts. Take a large pot and add the ingredients except chicken, sesame seeds and green onions. Place the pot over medium heat and allow the ingredients to combine well. Add the chicken pieces and cook them for around 40 minutes, over medium heat. Make sure that the pot is covered with a tight lid, while cooking. You must also turn the chicken pieces in between.
Once the chicken is done, remove these pieces from the pot. You may serve these chicken pieces with a small amount of sauce, in which they were cooked. You may also thicken the sauce with some cornstarch. Mix a teaspoon of cornstarch in two tablespoons of water and add it to the sauce. Gently heat the sauce, so as to thicken it. Now, pour some sauce over the chicken pieces and serve after garnishing with sliced green onions and sesame seeds. If you want to prepare soy sauce chicken wings, all you have to do is to use chicken wings instead of other chicken pieces.
Chicken with Soy Sauce Marinade
  • Soy sauce - 1/3 cup
  • Dark soy sauce - 3 tablespoons
  • Brown sugar - 4 tablespoons
  • Water - 1/3 cup
  • Chinese rice wine - 3 tablespoons
  • Green onions - 1½ stalks
  • Garlic cloves - 2
  • Sliced ginger - 1 tablespoon
  • Chicken thighs - 4
  • Shiitake mushrooms - 6
  • Salt and ground pepper - as per taste
How to Prepare
Mix all the ingredients and your marinade is ready. The above said recipe will be sufficient for making marinade for four large chicken pieces, like, thighs. Now place the chicken pieces in plastic resealable bags and pour the marinade over them. Seal the bag and let the chicken pieces marinate for around five hours. Make sure that these pieces are coated well with the marinade. Take some dried shiitake mushrooms (around 6 to 8) and soak them in warm water, for half an hour. Once done, drain the water and cut the mushroom into halves.
After five hours of marinating, you can take out the chicken pieces. Now, add two tablespoons olive oil to a pan and place the pan over medium heat. As the oil gets warm, add the chicken pieces and cook them for around five to seven minutes. Make sure that you turn them in between. When the chicken pieces get browned, add green onion slices and let it cook for another five minutes.
Meanwhile, take a pan and pour the marinade into it. Boil the marinade for around five minutes, before removing the pan from heat. Now, add the marinade along with the mushrooms to the chicken. Add salt and ground pepper as per your requirement and cook the chicken for another 40 minutes. If the sauce gets too thick, you may add some water.
