  • 1½ cups all-purpose flour
  • ½ cup alkalized cocoa powder
  • ¼ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ pound unsalted butter, softened
  • 1⅓ cups sugar
  • 2 large eggs, at room temperature
  • 1 (8-ounce) packet sour cream
  • Confectioner's sugar for topping
Directions for Preparation

Position a baking rack in the center of oven and preheat it to 350° F. To start with the pound cake recipe, prepare the baking pan (9x13x2) by light buttering and lining the bottom with a parchment paper. In a large mixing bowl, sift and combine the dry ingredients, flour, cocoa powder, baking soda, and baking powder. Keep this flour mixture aside. In an electric mixer, add butter and sugar. Blend at medium high setting for 3 - 4 minutes to make a fluffy mixture. Add eggs (one at a time), beating for 2 minutes after each addition.

Set the mixer speed to low, and add half of the flour mixture. Beat for some time, and scrape the sides of the bowl with a thin spatula. Fold in the sour cream and blend for 5 minutes. Again scrape down the beater and bowl, and add the remaining flour mixture. After blending for 4 - 5 minutes, you will get a smooth batter without clumps. Pour it in the prepared pan, and scrape down the sides. Bake it for 40 - 45 minutes, or until you get a well-risen pound cake. Allow this cake to cool down in a rack, and sprinkle confectioner's sugar before serving.
