Mushrooms are delicious to taste and also contain a lot of nutrients. They are popularly used in many recipes. These recipes are easy to make and do not require much preparation time. Given below are some recipes that can be whipped up, using shiitake mushrooms.

Soup Recipe

Ingredients
  • Shiitake mushrooms (sliced and stemmed) - 2 lb
  • Olive oil - 2 tsp.
  • Salt - 1 tsp.
  • Ground black pepper - 1 tsp.
  • Garlic (peeled and diced) - 2 cloves
  • Shallots (peeled and diced) - 6
  • Stock (chicken or fish) - 24 oz.
  • Onion (diced) - 1
  • Dry white wine - 1 cup
  • Heavy cream - 2 cups
Procedure

Add the olive oil to a pan and allow it to heat, properly. Add the mushrooms to it and allow them to cook for a few minutes. While this cooks, add the ground black pepper and salt to the pan, to taste. Include three parts of the shallots, including the garlic, to the mix, and keep tossing the ingredients around, so that nothing gets burnt. After the color of the shallots and garlic, changes, add the stock to the mixture. Remove it from the heat and blend the two, together.

To prepare the cream, pour some olive oil into a pan, and then add the onions and remaining shallots to it. Allow it to cook. Next, pour the dry white wine into it. Then, to this, add the stock and cream mixture, and allow it to cook for 10 minutes on a low flame. Strain it well so that your cream runs clear. Before serving the soup, combine the cream and mushroom mix, and serve it hot.

Stir Fry Recipe

Ingredients
  • Shittake mushrooms (sliced) - ½ cup
  • Button mushrooms (sliced) - ½ cup
  • Garlic (minced) - 4 cloves
  • Scallions (sliced) - 6
  • Soy sauce - 1 tbsp.
  • Bok choy (chopped) - 1
  • Vegetable broth - ¼ cup
  • Fresh ginger (grated) - 2 tbsp.
  • Sesame oil - 2 tbsp.
Procedure

In a pan, sauté both mushroom varieties with the garlic and soy sauce, in the sesame oil for 4 to 5 minutes. Add the scallions and bok choy to this, and allow it to cook for a few more minutes. Then, reduce the heat to low and add the ginger and vegetable broth to the pan. Allow this to simmer for 3 to 5 minutes. This recipe cam be served with hot rice.

Gravy Recipe

Ingredients
  • Shiitake mushrooms (sliced) - ¼ lb
  • Whole-wheat flour or brown rice flour - ½ cup
  • Marjoram (fresh) - 2 tbsp.
  • Vegetable stock - 1 quart
  • Soy sauce - 2 tbsp.
  • Apple cider vinegar - 1 tbsp.
  • Salt - ½ tbsp.
  • Ground black pepper - ½ tbsp.
Procedure

In a saucepan, pour some vegetable oil into it and allow it to heat up. Add the flour to the saucepan and stir it well. Add the mushrooms to it and allow it to cook for 5 minutes. To this, add the soy sauce and vegetable stock. On low heat, allow the whole mixture to cook for 20 to 30 minutes. Then, add the black pepper, salt, and apple cider vinegar, to it. The gravy should be ready in a few minutes.
