Simple Scalloped Corn Recipe With its Scrumptious Variants

Scalloped corn is generally served during Thanksgiving dinner. It's not very hard to prepare and also, it's quite delicious.

Scalloped corn is a baked dish made in a casserole, by mixing together corn kernels with milk and eggs. It's a great side dish which balances some main course recipes, which are particularly made up of meat and turkey.
Easy Scalloped Corn
  • Corn, 1 can (creamed)
  • Corn kernels, 2 cups
  • Cream, ½ cup (sour)
  • Butter, ½ cup (plain and unsalted)
  • Sugar, 2 tbsp.
  • Eggs, 2
  • Corn muffin mix, 1 packet
Grease a shallow baking dish with butter and keep it aside. In a large bowl, mix the eggs, sour cream, creamed corn, and butter. Use a spoon to beat this mixture together, until everything has combined well. Now add the sugar, kernels, and the muffin mix, and combine it well. Pour this mixture into the greased baking dish, and bake it in a moderately hot oven for 35 to 40 minutes. To check if the recipe is done, insert a knife; if it comes out clean, the dish is cooked.
Scalloped Corn with Crackers
  • Corn kernels, 4 cups (fresh)
  • Onion, 1 (small and finely chopped)
  • Butter, 3 tbsp. (melted)
  • Crackers, 1 cup (crushed)
  • Sugar, 1 tbsp.
  • Eggs, 3
  • Milk, 1 cup (skimmed)
  • Salt, 1 tsp.
  • Pepper, ½ tsp. (freshly ground)
In a large bowl, combine the eggs, kernels, milk, melted butter, and ¾ cups crackers. Add the chopped onions, sugar, salt, and freshly ground pepper. Pour this mixture into a greased shallow baking dish, and sprinkle the remaining crackers on top of it. Bake this in a moderately hot oven for about 45 minutes, until the top shows a golden brown color.
Crock Pot Scalloped Corn Recipe
  • Eggs, 3 (large)
  • Corn, 2 cups (creamed and thawed)
  • Onion, 4 tbsp. (minced)
  • Cracker crumbs, 1 cup (coarsely crushed)
  • Half and Half, 1 cup
  • Pepper, ½ tsp.
  • Sugar, 1 tbsp.
  • Salt, ¼ tsp.
With the help of a mixer, blend the milk and eggs together to get a light and frothy mixture. Add the kernels, crackers, half and half, sugar, salt, and pepper. Mix all the ingredients well and pour them into a lightly greased casserole. Place this dish inside a crock pot, and cook slowly for 2 to 3 hours over medium heat. When the top shows a golden brown color, remove the dish and allow it to cool before serving.
Scalloped Corn with Cornbread
  • Butter, 2 tbsp.
  • Flour, 2 tbsp.
  • Corn kernels, 3 cups
  • Egg, 1 (beaten)
  • Bread crumbs, ½ cup
  • Green bell pepper, 1 (finely chopped)
  • Milk, 1 cup
  • Sugar, 1 tsp.
  • Butter, 1 tbsp. (melted)
  • Salt, ½ tsp.
  • Pepper, ½ tsp.
In a saucepan, melt the butter over low heat and add the flour while stirring it. Cook this for about 2 to 3 minutes while stirring continuously. Gradually, add the milk and continue stirring. Let this mixture simmer over low heat, until it begins to thicken. Add salt and pepper. Add around 2 tbsp. of this sauce to the beaten egg and stir well. Add the egg mixture back into the sauce in the saucepan. Now, add the kernels, chopped green pepper, and sugar to the sauce mixture. Pour it into a greased casserole, and sprinkle it with buttered bread crumbs and paprika. Bake this in an oven at 662° F, until the top of the dish shows a brown color.
Scalloped Corn and Oyster Recipe
  • Corn, 1 can (creamed)
  • Cracker crumbs, 1 cup
  • Oyster stew, 1 can
  • Celery, ¼ cup (chopped)
  • Egg, 1
  • Milk, 1 cup
  • Butter, 2 tbsp. (melted)
  • Pimento, ½ tsp. (chopped)
In a large pan or bowl, combine the creamed corn, oyster stew, egg, cracker crumbs, milk, pimento, and celery. Pour this mixture into a greased casserole dish, and sprinkle additional cracker crumbs over it. Apply butter on it. Bake this dish in a moderately hot oven for 40 to 45 minutes and serve.
You can easily adjust the amount of ingredients to prepare the above recipes for a larger crowd.
