This mouth-watering Mexican green sauce is responsible for causing an explosion of flavors in your mouth, which is doused best by ingesting crunchy and delicious tortillas, tacos, or quesadillas. This recipe is a beautiful blend of tanginess along with a twist of spice and a swirl of chili and garlic.
For those of you who are new to salsa verde, it is a green colored sauce which is served as a condiment alongside other dishes or snacks. It is a Mexican creation but the Italians have modified it. So there is an Italian version of this sauce too. Try the following recipes and prepare a spicy and delicious sauce.
Traditional Recipe
  • Tomatillos, 16
  • White Onions, 2 (chopped)
  • Cilantro Leaves, 1 bunch
  • Lime Juice, 4 tbsp.
  • Sugar, 2 tbsp.
  • Serrano Chilies, 2
  • Garlic Cloves, 2 (chopped)
  • Salt, 2 tsp.
Remove the husk from the tomatillos. Cut it in half and put them on a foil sheet along with the garlic and chillies. Set them to roast, till the skin blackens slightly. Add sugar, salt, and lime. Blend the mixture in a blender till you get a thick puree. Let it cool in the refrigerator. Serve this sizzling treat as a condiment with chips or tortillas.
With Oregano
  • Tomatillos, 2 lb. (husked)
  • Onions, 1 cup (chopped)
  • Cilantro Leaves, 1 bunch
  • Lime Juice, 3 tbsp.
  • Sugar, 1 tbsp.
  • Serrano Chilies, 2
  • Garlic Cloves, 2
  • Salt, 2 tsp.
  • Fresh Oregano, 2 tbsp.
  • Cumin, 2 tbsp.
Finely chop all the ingredients. Put them in a pan, add some water, and bring them to boil. Add the spices, once the tomatillos become soft. Then, remove them from the pan and puree the mixture. Cool it in the refrigerator. Serve it cold.
With Red Wine Vinegar and Anchovies
  • Fresh Basil, 2 cups
  • Fresh Mint, 1 cup
  • Red Wine Vinegar, 1 cup
  • Parsley, 2 cups
  • Lime Juice, 1 tbsp.
  • Olive Oil, 3 cups
  • Anchovies, 4
  • Capers, 2 tbsp.
  • Garlic Cloves, 4
The ingredients are puréed in a blender and then, olive oil is added in order to get a thick texture. Salt and pepper is added according to the taste.
The above recipes can also be used to coat baked fish or grilled lamb and chicken. You can combine it with the regular grilled recipes. Just grill the meat the way you do normally and coat it with this sauce. Add some bread crumbs to the mixture in case you want to make the sauce slightly thick.
