How to Infuse Olive Oil with Rosemary

However, while making infused oil, the additions of moist herbs can create risks of moisture in the oil making it home to bacteria such as Clostridium botulinum. Thus only dried herbs or spices should be added to keep the oil away from such damage.

With Garlic
  • 9 sprigs dried rosemary
  • 2 bottles extra virgin olive oil
  • 2 teaspoons granulated garlic
  • 2 teaspoons peppercorns
Along with using rosemary to flavor the olive oil, there can be other spice ingredients which can also be incorporated to change the flavor of the oil. Therefore, in this recipe, we will be adding garlic which is one of the most widely used flavoring agents in all types of cuisines and has a strong flavor. Mince the garlic finely and sun dry it for about a day. Wash and dry three glass bottles and place about 3 rosemary sprigs, 1 teaspoon of garlic and 1 teaspoon of peppercorns in each of these bottles. Then in a sauce pan, heat the olive oil to 120 degrees F and pour it in the prepared bottles. Do not shake the bottles after that, but preserve them in a dark place for 7 days.

With Crushed Peppers
  • 2 teaspoons of dry red crushed pepper
  • 6 sprigs fresh rosemary
  • 1 cup sun dried tomatoes
  • 1 bottle extra virgin olive oil
In this recipes too, you have to heat the olive oil in the sauce pan on low flame for about 2 minutes and let it cool. Then in the washed and dried bottles, add the crushed peppers, sun dried tomatoes and the rosemary sprigs. Pour out the oil in the bottles and fill them up leaving some space near the necks. Close the lids and place them in a dark cool place for at least 5 days before using the olive oil.
