Recipe

Ingredients
  • Medium shrimp, peeled and deveined, 1 pound
  • Fresh lemon (juice only), ½
  • White wine, 12 ounces
  • Butter (softened), 4 ounces
  • Fresh Parmesan cheese (grated), 4 ounces
  • Garlic (finely chopped), 2 tablespoons
  • Pure olive oil, 3 teaspoons
  • Fresh parsley (finely chopped), 3 teaspoons
  • Italian seasoning blend, 1 teaspoon
  • Salt and pepper, to taste
Preparation
  1. Take a heavy bottom saucepan and heat some olive oil in it. To ensure that the oil does not start smoking, it will be best to heat the oil on a medium flame. When the oil is fully heated, put the shrimp into the saucepan and fry till it becomes tender.
  2. When this is done, take the shrimp out of the pan and place it one a plate. Reduce the flame to low and fry the garlic for two to three minutes. Make sure that the color of the garlic does not become brown and once the garlic gets cooked, add white wine over it.
  3. Then, directly squeeze the lemon over the white wine and mix. Allow it to simmer over medium to low heat for ten to fifteen minutes till the white wine is reduced to half.
  4. After this, put in the Italian seasoning blend and add butter to the saucepan gradually (one tablespoon at a time) and allow it to melt in the sauce. Stir till the butter gets completely blended.
  5. When the sauce achieves a creamy texture, add the cooked shrimp into it, followed by parsley, salt, and pepper.
  6. Transfer the shrimp scampi into a serving dish and top it with Parmesan cheese. Serve this mouth-watering shrimp scampi with freshly cooked pasta of your choice.
If you don't want to cook the shrimp scampi on the gas flame, then you can choose to bake it. This would involve baking at 350ºF for 6 - 7 minutes till the shrimp turns pink.
