Cabbage is a vegetable which is yummy but sadly, less famous than the cousin Kale. It is one of the oldest vegetables which dates back to the 1600s. Currently, there are many varieties in it like the red or purple, Brussels sprouts, Napa cabbage, etc.
You may choose any but the health benefits will always be there. It is rich in calcium, iron, dietary fiber, thiamine, and vitamins like C, B6, K, and A. It is very low in saturated fat and cholesterol. 1 cup of cabbage has only 15 calories, which is perfect for a person trying to lose weight. Cabbage Recipes
Servings: 8 Total Time: 15 mins
►Mayonnaise, 1 cup
►Fresh lemon juice, 3 tablespoons
►Shredded cabbage, 6 cups
►Shredded carrots, 2 cups
►Chopped green bell pepper, ½ cup
►Sugar, 2 tablespoons
►Salt, 1 teaspoon
►Mix all the vegetables in a bowl.
►Add mayonnaise, lemon juice, sugar, and salt to it.
►Mix all the ingredients well so that it coats properly.
►Cover and chill it. Serve chilled.

Tip: You can refrigerate it overnight to make the coleslaw creamy. The vegetables will absorb the taste properly and the sauce will break down to become more creamy. Just be sure to mix it well before you serve!
Cabbage and Bacon Soup
Cabbage and Bacon Soup
Servings: 4 Total Time: 45 mins
►Bacon/pancetta (Irish bacon preferred), ½ pound
►Chicken stock, 1 cup
►Shredded cabbage leaves, 2 cups
►Tomatoes, 2 (cut and with the juice)
►Potatoes, 2 (peeled and cut)
►Salt and black pepper, as per taste
►Cook the bacon in a stockpot on medium flame, until it is evenly brown. After it is done, drain off the excess fat.
►Mix the tomatoes, potatoes, and chicken stock (enough to cover all of it).
►Add salt and pepper and let it boil.
►Simmer it for 20 minutes until the potatoes are cooked properly.
►In the end, add the cabbage and simmer it for a few minutes.

Tip: You can make this into a filling meal by serving it with an irresistible Irish Soda Bread.
Grilled Cabbage with Lemon
Cabbage baked
Servings: 8 Total Time: 30 minutes
►Juice of 3 limes (about ¼ cup)
►Virgin olive oil, ¼ cup
►2 garlic cloves, chopped
►Cilantro leaves, ¼ cup
►Cayenne, ½ teaspoon
►Green cabbage, 1
►Grape seed or canola oil
►Salt, ½ teaspoon
►Sugar, ¼ teaspoon
►Lime wedges, to serve
►Mix all the limes, olive oil, garlic, cilantro, cayenne, salt, and sugar in a blender. It will become a pale orange sauce. When done, keep it aside.
►Take the cabbage and remove all loose leaves from it. Then, just cut it into even wedges. Brush all the wedges with grape seed or canola oil.
►Keep the wedges on the grill, cover them, and cook them for 5 - 7 minutes. When one layer of the side is blackened, flip it over and let it cook for 5 - 7 more minutes.
►The cabbage has to be removed when it starts wilting but is firm in the middle.
►Keep the wedges on a plate and pour the sauce over it. Serve it immediately with lime wedges.

Tip: You can also add fish sauce if you're not a vegan or a vegetarian. Add the sauce in the blender with the other ingredients.
Cabbage Rolls
Cabbage Rolls
Servings: 8 cabbage rolls Total Time: 1 hr
►Uncooked white rice, 1/3 cup
►Cabbage leaves, 8
►Lean ground beef, 1 pound
►Chopped onion, ¼ cup
►Egg (slightly beaten), 1
►Ground black pepper, ¼ teaspoon
►Tomato soup, 1 can (10.75 ounce)
►Water, 2/3 cup
►Salt, 1 teaspoon
►Boil water in a saucepan. Add the rice and stir. Simmer it on a low flame for 20 minutes.
►Take another saucepan and boil a mixture of salt and water. Add cabbage leaves to it and cook for 3 - 5 minutes until they are softened. Drain out the water.
►In a bowl, mix the ground beef, cooked rice (step 1), onion, egg, 2 tbsp. of tomato soup, and salt and pepper. Mix it properly.
►Distribute the mixture evenly in the 8 leaves. Roll them and you may pin it with a toothpick to keep it all together.
►Keep the cabbage rolls in a skillet and pour the remaining tomato soup over it. Cover the skillet and let it simmer for 40 minutes. Keep checking the liquid and stirring in between.

Tip: You could use leftover cooked rice instead of spending time in cooking the rice.
Buttered Cabbage
Cabbage salad
Servings: 6 Total Time: 30 mins
►Cabbage, 1 (chopped)
►Chopped Onion, ½ cup
►Peas, ½ cup
►Butter, ½ stick
►Black pepper, ¼ teaspoon
►Salt, 1 teaspoon
►Add all the ingredients in a pot and cook for over 20 minutes. Cook properly until the cabbage is tender. Also, keep stirring in between.
►Serve it hot.

Tip: You can add bacon to this. Just cook the bacon crisp beforehand. Crumble it and sprinkle it in the end. You can add any other veggies you want or you could simply do it with cabbage.
Cabbage and Pasta
Pasta with Cabbage
Servings: 6 Total Time: 20 mins
►Shredded Cabbage, 4 cups
►Chopped Onion, 1.5 cups
►Pasta or Noodles of your choice
►Garlic powder, ¼ teaspoon
►Black Pepper, ¼ teaspoon
►Salt, ½ teaspoon
►Vegetable Oil, ¼ cup
►Heat the oil in a skillet on a medium flame. Saute the onions and cabbage until they are brown and soft.
►Add the remaining ingredients and cook it for 3 - 5 minutes.
►Serve it immediately.

Tip: If you love meat, then kielbasa is the best option.
Kimchi Tofu Stew

Servings: 6 Total Time: 80 minutes
►Cabbage Kimchi, 4 cups (plus 1 cup of the liquid)
►Cut Tofu, 116 oz
►Korean hot pepper paste (gochujang), 2 tablespoons
►Spring onions, 8
►Soy sauce, 2 tablespoons
►Toasted sesame oil, 1 tablespoon
►Egg yolks, 6
►Toasted sesame seeds, 2 tablespoons
►Vegetable oil, 1 tablespoon
►Freshly ground black pepper
►Boil salted water in a pot. Add pieces of tofu and let it cook for about 4 minutes. Remove the tofu in a different bowl.
►Heat vegetable oil on a medium flame. Add the cabbage and gochujang and let it cook for 5 - 8 minutes. Keep stirring till it starts browning.
►Add the kimchi liquid and 8 cups of water. Let everything cook for 35 - 40 minutes.
Now, add the soy sauce, tofu, and the chopped spring onions. Cook for another 20 minutes so that the tofu absorbs the flavor.
►Add sesame oil to it and top it with salt and pepper.
►Pour the stew in bowls and garnish with egg yolk and some sesame seeds.

Tip: Just skip the egg yolk and you've a tasty vegan option!
Roasted Cabbage and Apple
Braised red cabbage
Servings: 4 Total Time: 1 hr
►Red Cabbage sliced, ½
►Onion, 1 (sliced)
►Apple, 1 (sliced)
►Sprigs of thyme, 2
►Red wine vinegar, 1 tablespoon
►Olive oil, 2 tablespoons
►Spicy sausage, 1 pound
►Kosher salt
►Crusty bread (to serve)
►Preheat the oven to 400° F. In a baking dish, add cabbage, apples, thyme sprigs, vinegar, onion, 1 tbsp. oil, and ¼ cup water. Sprinkle salt and pepper on it. Cover it and let it roast.
►Keep it for 35 - 40 minutes until the cabbage is soft.
►While it is roasting, cook the sausages in a skillet side by side for 10 minutes.
►Add the sausages to the baking dish during the last 10 minutes.
►Serve it with a crusty bread.

Tip: You could use green cabbage or a mix of both in this recipe.
