Pumpkin Pie Recipe with Whipping Cream
  • 16 ounces stewed pumpkin, pureed
  • 3 teaspoons cornstarch
  • 4 ounces sour cream
  • ¾ cup whipped cream
  • 3 beaten eggs
  • 1 teaspoon pumpkin pie spice
  • ¾ cup white sugar
  • ¼ teaspoon Kosher salt
  • 1 teaspoon brown sugar
  • ¾ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 3 teaspoons apricot preserves
  • 1 unbaked pumpkin pie crust
In a large bowl, combine cornstarch, white sugar, brown sugar, ground ginger, cinnamon, and pumpkin pie spice. Mix well till all the ingredients are completely blended. Then, stir the pureed pumpkin, whipped cream, sour cream, and beaten eggs into the bowl and continue stirring for some time. Place some apricot preserves on the pie crust and transfer the pie filling on it. In an oven preheated to 325°F, bake the pie for 55-60 minutes. Insert a toothpick to see whether it is fully done. Take it out of the oven and cool it on a wire rack. Cut the pie into pieces and serve immediately. You can also store it in the refrigerator by covering it with a tin foil.
Pumpkin Pie Recipe with Sweetened Condensed Milk
  • 16 ounces pumpkin puree
  • 14 ounces sweetened condensed milk
  • 2 beaten eggs
  • ½ teaspoon salt
  • ½ teaspoon ground ginger
  • 1 unbaked pie crust
  • 1½ teaspoon ground cinnamon
  • ½ teaspoon nutmeg
In a large mixing bowl, mix all the ingredients by stirring with a spatula or by using a blender. Once everything is mixed completely, set the bowl aside. Line the pie crust with a foil and bake for fifteen minutes at 425°F. Take the crust out of the oven and pour the pie filling on it. Bake the pie at 350°F for 40 minutes and conduct the toothpick test before taking if out the oven.
How to Make Pumpkin Pie from Scratch
If you want to make pumpkin pie from scratch, the recipe you have to follow is the same as the above. The only difference is that to make homemade pumpkin pie from scratch, you will have to make the pie crust at home rather than buying an unbaked one. Let us take a look at the method of making the crust.
  • 3 tablespoons whipped cream
  • 1 stick of cold butter, cut into pieces
  • 1¼ cups all-purpose flour or wheat flour
  • 4 ounces powdered sugar
  • 4 ounces ice water
  • Pinch of kosher salt
Take wheat flour, powdered sugar, and kosher salt in a bowl and mix them using a hand blender. This should be followed by pieces of butter, which also have to be blended with the other ingredients. When lumps begin to form on the mixture, add the cream and blend again until it takes the form of a biscuit dough. Transfer the dough in a plate and make a ball out of it.
Once this is done, flatten the dough in the shape of a plate. Put the crust in a plastic bag and place it in the fridge for half an hour. After thirty minutes, take the dough out and line it with foil. Do not forget to make tiny holes with a fork on the crust. Place the crust in the oven and bake it for 10-15 minutes. Remove from the oven, take away the foil and keep it for baking for 10-15 minutes until it turns golden or brown. Cool the crust on a wire rack and then continue to make the pie according to the directions given above.
