Vegetarianism has existed for hundreds of thousands of years in many different cultures, for economic, ethical, and even religious reasons. Today, with more choices in food than ever before, many people have now started to opt for vegetarian food, turning into vegetarians or even vegans. A vegetarian diet would exclude any form of meat, fish, and poultry, but it does include some animal products like eggs and dairy products. A vegan diet, on the other hand, excludes all forms of meat and animal products, like honey, eggs and, dairy.
Vegetarian recipes are tasty and easy to make. You can turn any recipe into a vegetarian one by replacing the meats with any vegetarian alternative. The key to a rich and healthy vegetarian diet, like with any other diet, is to eat many types of foods like vegetables, fruits, plenty of greens, nuts, whole grain products, legumes, and seeds.
Lentil Soup
This hearty lentil soup is packed with veggies and is absolutely delicious. Serve with warm cornbread and your soup will be perfect.
  • 1 onion (chopped)
  • ¼ cup olives
  • 2 carrots (diced)
  • 2 celery stalks (chopped)
  • 2 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 can tomatoes (crushed)
  • 2 cups dry lentils
  • 8 cups water
  • ½ cup spinach (thinly sliced)
  • Salt to taste
  • 2 tablespoons vinegar
  • Black pepper to taste
In a large pot, heat some oil over a medium flame. Add the carrots, onions, and celery, and stir until the onion becomes tender. Stir in the bay leaf, garlic, basil, and oregano, and cook for about 2 minutes. Stir in the lentils and then add the tomatoes and water. Bring the mixture to a boil, and then reduce the heat and let it simmer for about an hour. When you are ready to serve the soup, stir in the lentils and then cook. Stir in the vinegar, salt, and pepper.
Greek Pasta with White Beans and Tomatoes
This is a quick and easy recipe. The flavors are all wonderfully unique as they combine together.
  • 2 cans Italian-style tomatoes (diced)
  • 1 can cannellini beans (rinsed and drained)
  • 10 oz spinach (chopped)
  • 8 oz penne pasta
  • ½ cup feta cheese (crumbled)
Cook the pasta with some salt in a pot of boiling water until al dente. In the meantime, mix the beans and tomatoes in a large skillet, and bring it to a boil over a medium-high flame. After this, reduce the heat and let it simmer for ten minutes. Add the spinach to this sauce and let it cook for about 2 minutes. Keep stirring constantly. Pour the sauce over the pasta and then sprinkle it with feta cheese.
