Plain Cheesecake Recipe

One of the most adored form of desserts, cheesecakes are made of fresh, soft, and creamy cheese with the base of the cake made of crushed biscuits, sponge, or pastries. Here are few recipes that are absolutely delicious.
Cheesecakes are usually topped with sweetened syrups and toppings made of compotes of fruits or purées. There are various ways to make and bake cheesecakes and they are sure a very delicate affair to prepare. Almost all plain cheesecakes are made of using cream cheese, sugar, eggs, and heavy or sour creams.

Best Plain Cheesecake Recipe

  • Graham's crackers, 4 oz.
  • Butter, 4 tbsp.
  • Sugar, 1 tbsp.
  • Cream cheese, 2 ½ lb.
  • Sugar, ¾ cup
  • Lemon juice, 2 tsp.
  • Large egg yolks, 2
  • Large eggs, 6
  • Vanilla extract, 1 tsp.
  • Heavy cream, ½ cup
  • Salt, ⅛ tsp.
Let's learn how to prepare the crust for the cheesecake. Make small pieces of the graham's crackers. Put them in a food processor and grind for about 10 seconds. Put those crushed crackers, 1 tablespoon of sugar, and melted butter into a bowl and mix well, until the pieces of crackers get a wet appearance.
Now prepare the pan. For that, line a springform pan with 1 tablespoon melted butter and then put the crushed cracker mixture over it. Make a fine layer by pressing the crackers on the pan, using a flat bottomed apparatus (a cup probably). To make equal layer at the outer side of the crust, use a flatware tablespoon.
Bake this crust into oven at 325°F, until it turns golden brown. Bring it out and place on a cool wire rack.
While it is getting cooled, prepare for the filling of the cheesecake. Take a large bowl and put chunks of cream cheese in it and beat it with a blender until the cheese gets really smooth (2-3 minutes). Afterward add salt and one third of the sugar into it. Beat for a while and repeat the procedure with the remaining sugar and continue beating.
Remember, you have to mix the sugar in 3 installments. Add lemon juice and vanilla extract and beat and add cream and while beating add egg yolks and whole eggs. (remember to continue beating). Now put this mixture on the cooled crust, evenly.
Put the cake pan on a sheet pan and bake in the preheated oven at 500°F. Reduce the temperature to 200°F after 10 minutes of baking. Now bake the cheesecake for 1½ hours. To set the cake fully, place it in the refrigerator for half hour and serve cheesecake slices and serve with any of your favorite topping.

Low Carb Cheesecake

  • Almond meal, 1 cup
  • Artificial sweetener, 2 tbsp.
  • Melted butter,, 2 tbsp.
  • Plain cheese, 1½ lb.
  • Eggs, 4
  • Vanilla extract, 1½ tsp.
  • Lemon juice, 1½ tsp.
  • Artificial sweetener, 1⅓ cups
  • Sour cream, ¼ cup
Prepare the crust by combining almond meal, melted butter and artificial sweetener together and forming a plain layer of it in a springform pan. Bake for 10 minutes. Beat the cream cheese well until it gets very smooth and add artificial sweetener, lemon juice, vanilla extract, cream, and eggs into it.
Beat very finely and pour the mixture on the almond cheesecake crust. We will use the water bath baking method. For this method, wrap the sides of the springform pan with aluminum foil and put it in the baking pan.
Put water around the pan and bake over 350°F for 90 minutes. While baking, make sure you check for the softness of the cheese. After baking, chill the cake and garnish with the favorite sugar free topping or fruits.

Fluffy No Bake Cheesecake

  • Soft cream cheese,8 oz.
  • Baked cheesecake crust, 1
  • Whipped cream, 2 cups
  • Sugar, ⅓ cup
Take cream cheese and sugar into a bowl and beat it well with help of a blender, until the mixture gets very smooth. Add and gently stir the whipped cream into it. Place this mixture on the prepared and baked cheesecake crust. Put this cheesecake in refrigerator for over 2 hours. Put any of your favorite toppings and enjoy this yummy recipe.
