Preparing a pizza at home can be fun. When you are preparing a homemade pizza, you can prepare a pizza dough recipe without yeast and homemade pizza sauce. Simple Pizza Sauce Recipes from the Scratch
Since you have taken it upon yourself to ending the pizza making process through and through, let me tell you a secret. It is better that you use fresh tomatoes and puree them, rather than use canned tomatoes. In the following recipe, you will see that I have asked you to use canned tomatoes, but you can easily substitute it for fresh tomatoes. You just need to use 25% more of fresh tomato purée than what you get from a can. If you make tomato purée in bulk and store it in sterilized jars, you can keep it in the refrigerator for approximately a month! So, here goes.
1. Tomato Pizza Sauce
This tomato-based condiment is perfect for a pizza to be topped with cheese and pepperoni! Here's how you go about concocting it.

  • Tomatoes (crushed), 1 28-oz. can
  • Onion, 1 (large, cubed)
  • Garlic, 2 cloves (minced)
  • Oregano, 2 tbsp. (dried)
  • Olive oil, 2 tbsp.
  • Basil pesto sauce, 2 tbsp. (made separately by mixing basil leaves, kosher salt, olive oil and garlic cloves in a food processor)
  • Kosher salt, 2 tsp.

How to Make 

Begin by heating the olive oil over medium heat and then throwing in the onion bits into the hot oil. Remember, olive oil has a low smoking point, so you need to be vigilant about it. Once the onion turns translucent, add the garlic to the pan and sauté until it turns a golden. Pour in the tomato at this juncture and add the pesto and oregano. Use a ladle to mix it all up well and then let it simmer for a good 15 minutes. Keep stirring this mixture regularly or it will stick to the bottom and burn. After 15 minutes, pour it into a bowl and blend it well with a hand blender. Make sure that the head of the blender is completely covered by the sauce as otherwise you will spray the sauce all over the place. Once the sauce is satisfactorily smooth, pour a ladleful onto a pizza crust and then move on to decorating your pizza.

Begin with puréeing 10 ripe, skinned tomatoes in a food-processor, after boiling them in hot water for 3 minutes. In a pan, heat 4 tablespoons of olive oil. Once it is optimally hot, throw in 2 stalks of chopped celery, 1 finely diced onion and 2 cloves of minced garlic in the pan and keep stirring until the onion becomes translucent and the garlic takes on a golden shade. Use a ladle to mix in all the ingredients after adding ¼ cup of finely chopped fresh basil, a bay leaf, 1 very finely diced red capsicum and 2 finely chopped up carrots and wait till they soften. The heat should be medium. To this add 2 tablespoons of tomato paste, 2 chopped and skinned tomatoes and the entire tomato purée that you made earlier. Let the entire concoction sit on the stove and simmer for a good 90 minutes. Stir all the ingredients in every 15 minutes and then season with salt and pepper as per taste. After 90 minutes, or once you have reached the consistency you are looking for, remove the bay leaf and turn the heat off. You pizza sauce is all ready to rock your world!

The beauty of this recipe is that you do not need to begin with puréeing tomatoes which is, let's face it, quite a messy affair. Just heat 2 tablespoons of olive oil and 1 tablespoon of butter in a relatively large frying pan and then toss in ½ a cup of chopped onions, a minced garlic clove and ¼ cup of finely hacked celery. Once the garlic becomes slightly brownish and the onion softens and becomes translucent, pour in an 8-oz. can of tomato sauce and a 6-oz. can of tomato paste. Use a spatula to mix all the ingredients, wait till it takes on a smooth texture and then add in a teaspoon each of fennel seeds, dry basil and dry oregano, 2 tablespoons of grated Parmesan cheese, ½ a teaspoon each of sugar and salt, a small bay leaf and ¼ teaspoon black pepper. Stir the concoction well to commingle everything and let a steady simmer set in for about an hour. You can take the pan off the heat sooner if the consistency seems right to you before 60 minutes. Discard the bay leaf before use the sauce on your pizza base.

Ok, here is the simplest version of a tomato-based pizza sauce and it is a godsend when it comes to a not so well-stocked larder. Heat 2 tablespoons of olive oil in a skillet and toss in a finely chopped white onion and 2 tablespoons of minced garlic in it. Wait till the onion bits turn translucent. Stir continuously so that nothing chars or sticks to the bottom of the pan. Now fold in tomato purée made from 12 plum apples and season with 2 tablespoons of sugar, 1 tablespoon of salt and ½ a tablespoon red pepper. Use a spatula to mix everything uniformly and then let a steady simmer set in on low heat. Remove the condiment from the stove once you get to the desired consistency. You can increase the amount of red pepper if you want it to be a little more red and hot!
Pizza With Chicken And Vegetables
2. Pesto Pizza Sauce
  • Basil, 30 gms. (fresh)
  • Ricotta cheese, 110 gms. (grated)
  • Parmesan cheese, 30 gms. (grated)
  • Extra virgin olive oil, 2 tbsp.
  • Walnuts, 2 tbsp.
  • Garlic, 1 clove
  • Kosher or sea salt, to taste
  • Black pepper, a pinch (freshly craunched)

How to Make 

This paste can literally be made in three steps if you have a powerful mixer-grinder. You will not even need to cut of mince the basil, garlic and walnuts in that case. Just place all these three ingredients in the mixer along with the olive oil and grind on top speed until you have a grainy-looking smooth paste. Now, use a rubber spatula to scrape the paste off the mixing container and place it in a large glass bowl. Add the grated Parmesan to this paste and mix well with a ladle. Then add the ricotta and repeat until you are left with a uniformly mixed paste. Season with salt and pepper and voila! You pesto is ready to dress up your pizza crust!

3. White Pizza Sauce
  • Milk, 2 cups
  • Flour, ⅓ cup
  • Butter (or margarine), 1 tbsp.
  • Salt - ¾ tsp.
  • Onion powder, ⅛ tsp.
  • Paprika, ⅛ tsp.
  • Pepper, ⅛ tsp.

How to Make 

In a large glass bowl, pour in the flour and then add the onion powder, paprika, pepper and salt to it. Thoroughly commingle the contents to have a uniform mixture and then slowly pour in the milk. Keep stirring the concoction continuously as you pour the milk so that lumps do not get a chance to get formed and you get a smooth and thick concoction. Now pour this wet mixture into a skillet and bring it to a boil on low heat. Keep stirring frequently. Once it has become relatively thicker and smoother to your liking, add the butter to it and wait till it melts completely. Take it off the heat and use it on the pizza base immediately.
