Although it looks complicated with all the layers, it really isn't. You can make this right at home without much trouble. The layers are simple: crust, cream cheese filling, pistachio pudding, and whipped topping and nuts. It only takes about 30 minutes to prep depending on the recipe.
Pistachio pudding makes a great addition to a number of celebrations like St. Patrick's day (it's green) and Easter. You could even throw one together for a potluck.
Pistachio Pudding Recipe
  • 2 packages instant pistachio pudding mix
  • 1 cup all-purpose flour
  • 1 package cream cheese
  • 3 cups milk
  • ½ cup butter or margarine
  • 1 cup powdered sugar
  • 2 tablespoons white sugar
  • 1 cup whipped cream
  • 1 cup chopped pistachio nuts
Take a medium-sized bowl and mix together the all-purpose flour, butter (or margarine), white sugar, and pistachio nuts for the pie crust. Once all the ingredients are combined, press into a greased baking pan and bake in a preheated oven at 350 ºF until it turns golden-brown. Remove the crust and let it cool down to room temperature. In a separate bowl, whip the cream cheese, half cup of whipped cream, and powdered sugar until creamy. Spread this mixture on top of the crust. Combine the pudding with milk and pour it on the pie. Top with the remaining nuts and whipped cream on the pudding layer and place it in the refrigerator for about one hour.
Pineapple and Pistachio Pudding Recipe
  • 1 package pistachio pudding mix
  • 1 can crushed pineapple (undrained)
  • 1 cup all-purpose flour
  • ¼ cup walnuts (chopped)
  • ½ cup pistachios
  • 1 cup whipped topping (frozen)
  • ½ can plain yogurt
  • ¼ cup coconut (shredded)
  • ½ cup vanilla yogurt
  • 5 tablespoons confectioner's sugar
  • ¼ cup butter or margarine
First, prepare the pie crust. Mix the all-purpose flour, butter, and walnuts, and bake at 350 ºF for about 15 minutes. Allow this to cool down to room temperature. Now, take a large bowl and combine the pistachio pudding mix, crushed pineapple, plain yogurt, vanilla yogurt, confectioner's sugar, and shredded coconut. Blend to a smooth mixture. Thaw the frozen whipped topping so that it can be spread easily. Spread this mixture on the pie and top it with whipped topping. Place the dish in the refrigerator for about one hour to chill.
