Pesto sauces taste amazing when served with meat, vegetables, bread, and even pasta. Sprinkle parsley leaves and pesto, and you can accentuate the flavor of almost any dish. Generally, basil is used to make pesto sauce, however, parsley can also be used to prepare lovely pesto, which you can use in your favorite Italian pasta recipes, sandwiches, pizzas, etc.
Parsley Pesto Sauce
  • 2 cups fresh, flat-leaf parsley leaves
  • 2 tablespoons toasted pine nuts or walnuts
  • 1½ tablespoons grated fresh Parmesan cheese
  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon salt
Method of Preparation
You need to take all the ingredients and blend it in the food processor, till you receive a smooth paste. Your sauce is ready to use.
Creamy Sauce
  • ½ cup butter
  • 1 bunch fresh, chopped parsley leaves
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
Method of Preparation
Melt the ½ cup butter over low heat in a saucepan. Then, whisk together the lemon juice, garlic, and parsley. You need to continue whisking these ingredients over low heat for about 5 minutes. Your sauce is ready to be served.
Parsley Pesto with Almonds
  • 1 cup fresh parsley leaves
  • ⅓ cup whole, toasted almonds
  • 1 tablespoon fresh thyme leaves
  • 2 garlic cloves
  • ¼ cup almond oil
  • ¼ cup freshly-grated Parmesan cheese
  • ¼ cup low-salt chicken broth
Method of Preparation
You need to finely chop parsley before use. Then toss the parsley, garlic, toasted almonds, and thyme into a food processor. As you mix these ingredients, gradually add oil and process until made into a smooth purée. Now mix in cheese and chicken broth to the smooth purée. You can add salt and pepper for seasoning. You can store it for up to 3 days in an air tight container in the refrigerator.
Basil Parsley Pesto
  • 2 cups fresh basil, packed
  • ¼ cup pine nuts
  • 1 cup fresh parsley leaves
  • 3 garlic cloves
  • Extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
Method of Preparation
In a skillet, you need to toast pine nuts over medium heat. You need to keep shaking the pine nuts till you get the fragrance. Now, remove from flame and keep aside. To the same skillet add garlic and toast for 5 minuets till light brown. Now, add all the ingredients (do not add olive oil) to the food processor. As you process the ingredients, gradually add the olive oil. Process the ingredients till you get a smooth consistency.
